All of Cathe's weight DVDs are great, but if I was just starting out, I'd probably go with an oldie but goodie...MIS. This one is still one of my favorite total body weight workouts. It's pretty straightforward and doesn't require tons of equipment (a loaded barbell that you really don't have to change up too much and a bunch of dumbbells). Now if you are looking for an even more thorough, multi day split, I'd start with Pure Strength but also consider getting the Gym Styles. PS is sort of like MIS, just spread out over three workouts (so each muscle is worked more than in MIS). The Gym Styles are way more fun, however and possibly even more effective.
