Here is a positive thread for those that think I am not

I made peach/pecan cole slaw and bourbon peach chicken in the crockpot. It's almost 30 degrees out here in MI and that's a heat wave so I thought of peaches. Except I think I put too much bourbon in - the entire first floor of the house smells like Jim Beam.

Going to shred the chicken for sandwiches on onion buns.

Then off to work concessions for a basketball tourney where I know I will nip at the popcorn.

Red wine on returning home - early to bed for son plays at 10:15 am in basketball tourney. He needs sleep - couldn't hit the broad side of a barn last night.

I think you need to post the bourbon peach chicken recipe for us! That sounds delish and I'm always looking for new crockpot recipes.

I am always looking for good slow-cooker recipes. I think chicken can come out tough and rubbery, so by all means, post 'em if you've got 'em!

Meanwhile, what in the heck and I going to make tonight? :rolleyes:
 
Sounds nice. I'm having my BFF and BF over tonight for lasagna, wine and "Burn After Reading". Gonna use my new popcorn popper too!

Cricket's first group training class is tomorrow. She's had 2 private sessions at home and is doing GREAT! The trainer is now in love with corgis and thinks he wants one for his next dog because she's so easy to train. Not sure what I'll be doing the rest of the weekend. Definitely doing Disc 3 of Meso 1. Maybe moving my dining set to where I keep my piano and my piano to the dining area. Or...not.

Bourbon Chicken

1 cup peach preserves
1 cup chili sauce
4 tablespoons molasses
1/2 cup bourbon
3 lbs chicken (can use tenderloins or breasts or whatever)

Mix ingredients and pour over chicken in crockpot. My crockpot cooks hot so I put it on low for 5.5 hours. Then you serve as is over rice or shred for sandwiches. Onion buns with lettuce and purple onion.

1.5 containers of peach yogurt
4 TBL of mayo
4 Tablespoons of apple cider vinegar
6 cups cole slaw mix (I use 4 cups of reg. cole slaw and then add purple shreded cabbage)
1 15 oz can of diced peaches (more if desired)
1/2 cups chopped pecans.

wisk yogurt, may and vinegar and pour over ingredients. Refride for 4 hours stirring occasionally.

These recipes are all of Sandra Lee's Semi Homemade 20 minute meals #2 cookbook. I twisted the chicken recipe for my crockpot.
 
Chili sauce

Baylian, what is chili sauce? Does chili sauce come in "mild," because there's a limit to how much heat I can serve to the family and still get them to eat it.

It sounds really good and easy -- two requirements for anything I make.

Pearl . . . I'm not sure it is that hot and I think she is speaking of the kind that looks like catsup and can be found near the catsup/ketchup.

I'm making Mexican Pork Chili from Tyler Florence, also from Food Network TV.

It uses tomatillos and poblano peppers and we'll put in into tortillas. For leftover lunches I just eat it plain ! :p

The Bourbon Chicken looks delish! Does it end up tasting kind of like BBQ chicken? I'm asking because DH hates BBQ sauce and wouldn't eat it if it does :rolleyes:
 
I made the Bourbon Chicken tonight with a pork roast...and I used rum instead of Bourbon because I had it on hand. This was awesome and way too easy!

Karin - I think it came out with more of a sweet and tangy flavor, not smoky like BBQ.

Thanks for the info. At least I'll have some idea of what I'm looking for (and where to look).

Pearlstrand, I usually purchase my chili sauce in the same aisle as the canned chili. I've also seen it mixed in with taco section. I think I have found it next to the enchilada sauce before. Hope this helps.
