What foods do you get your Protein/Carbs/Fat from?

Karen, next time at you're at WF, grab yourself a jar of Artisana raw coconut butter (give it a stir, the oil sits on top) -- it's soooooo good! I'm addicted.
If your butter is hardened, you can just set it in a pot of hot water until it gets soft enough to stir. Doesn't take too long. If you have a Vitamix, buy the organic coconut flakes and DIY! :D We have a Wegmans Food Market where I live and they sell extremely fresh coconut flakes in their bulk bins. Bob's Red Mill also sells coconut flakes. I buy about two pounds of flakes from the bulk bin for about $4.50/lb. There are probably 20 cups of flakes (at least!) in a pound. To make 16 oz. of coconut butter in the Vitamix, blend about six to eight cups of flakes. That's all you need! You add the flakes to the blender and use the tamper pretty vigorously. I generally add the flakes about two to three cups at a time. Once you have the flakes all tamped down, just let the blender run until it warms, and then soon after, you will see the flakes turn into luscious coconut butter!! :D It's SO easy to make your own and the cost savings really add up. I make all my own nut butters now too. It's fun!! Plus, no additives or preservatives, and I really save a lot of money. :p

Your post brought back memories! I can recall my early teen agetime in Africa. We did slice raw coconut, shred it and make coconut bite cooked with sugar cane. Now I am thinking of cooking a healthier alternative. Oh no addictive :D:D:D
