Vegetarians and crockpots

Any veggies or vegans here use a crockpot? I'm considering getting one, but I'm not sure how useful it would be if I don't make meat dishes. Any thoughts? Thanks:)

I make several different burrito fillings in the crockpot that have beans or barley, etc. in them. It is also awesome for veggie soups. I dump any combo of beans and veggies, wild rice, etc. in the pot in the morning and just let it cook on low all day. I love my crockpot and highly recommend one!
 
I have a crockpot that I never use because I don't know any veggie recipes for crockpot... I used to use it about 6 years before before I became a vegetarian... I miss cooking in the crockpot.... I'm going to check some recipes :)
 
This is a great thread! It never even occurred to me to use my crockpot to make veggie stuff. I haven't used it in 2 years!

Check this out! (I'm not a vegetarian really but made this recipe in the crockpot and it's really good) I've been eating it almost every day this past week! Love it! (Cook on low setting for about 4 hours)

1 or 2 cans of stewed or diced tomatoes
3 plus large green onions
1 large can of beef broth (no fat)
1 pkg. Lipton Soup mix (chicken noodle)
1/2 cup brown rice
1 bunch of celery
2 cans green beans
2 lbs. Carrots
2 Green Peppers

Cover rest with water and
Add:

Salt to taste
Jalapeno slices to taste
Lousiana Hot Sauce to taste
Bouilion to taste

Cut veggies in small to medium pieces.

You can also cook it on the stovetop if you'd rather:
Cover with water. Boil fast for 10 minutes. Reduce to simmer and continue to cook until veggies are tender.

YUM!

You could easily make this recipe vegetarian by using vegetable broth instead of beef, and Lipton vegetable soup mix! :)
 
I have the Best Vegetarian Slow Cooker Recipes cookbook. It has some great recipes. But if you are considering this one, you may want to know that it is not the just-dump-everything-in-and-wait approach to slow-cooker cooking. You usually pre-cook the veggies and spices a little first, before adding them to the crockpot. I don't mind this, but it's not something I can usually do in the morning; I prepare the recipes the night before, refrigerate overnight, and start them cooking the next morning.

I didn't know there was actually any "meat" in the chicken noodle mix...or beef in beef broth..sorry.

I actually used the Lipton Noodle Soup mix (not chicken noodle anyway) and beef boullion instead of beef broth.

Kay, thanks for informing me Emily!! It's not a big deal to me since I'm not vegetarian. Just thought I'd mention this great recipe and those 2 can easily be subsituted to taste with other spices. :)
