Vegetarian Chili Recipes?

Mollie Katzen of Moosewood fame has some great vegetarian chili recipes in her revised 25th anniversary "Moosewood" & her "Still Life with Menu" cookbooks. Probably all of her cookbooks have some sort of legume chilis. Her recipes are very user friendly & your local library probably has a few of her cookbooks.

The red bean chili with bulgur in "Moosewood" & the caribbean black bean chili in "Still Life" are very good. The bulgur in the chili has a meat like texture.

Deborah Madison has some wonderful legume recipes in "Vegetarian Cooking for Everyone". The lentil minestrone is awesome. She has several bean, split pea & lentil soup recipes - all have been repeaters. None are actually chili, but in the bean chapter, there are some great recipes for all types of beans some of which are thick & some are soupier. I can hardly wait for it to get cooler so that I can make her mixed beans in broth.

Not that you asked, but crumbled tempah in chili & pasta sauce gives it a nice "meaty" texture. It could be used instead of ground beef or sausage in traditional recipes.

Hi Dani...there is a great one in the ETL book (pg 222)....but I did modify it as I used canned beans instead of starting with dry beans. Here's what I changed and then added...5 cups of canned beans (I like Kidney, pinto, and black) 1 can tomato sauce and 1 and 1/2 cups water with 2 tsps vegey boullion dissolved in it....My DH and I absolutely love this one....:)...Carole
 
Hey Dani, the recipe for chili that Winter gave you is really good! A while back someone posted this same recipe on this web site; I tried it, and have been making it ever since. One thing that I do differently is that I add jalapenos and cayenne pepper. I like hot & spicy foods! Sometimes I add cilantro as well. Anyway, I thought I'd add my 2 cents in.

That looks fantastic. I think I'd add some olive oil too, so it would "stick to the ribs" more. Food with no fat whatsoever is not as satisfying as a meal to me. I am so hungry now! But I'll settle for a salad, because there's no time to cook that chili.

I can't wait until cold weather so I can have thick hearty soups again. Call me crazy, but I hate summer, except for the excellent produce and the long days. I hate the heat, humidity, bugs.

It does look really good. I LOVE hot and spicy foods too. I just might add the hot stuff and a little olive oil.

Thanks everyone for the suggestions! I made some veggie chili and then poured it on top of a bunch of lettuce. I also threw in some pieces of corn tortilla (not chips, the actual low fat corn tortilla ripped in little pieces) and just had a very healthy and filling taco salad!!

Sounds good! You could also make your own, fat=free corn chips by sticking those tortilla pieces in the oven at 300 degrees until they turn crisp.
