Turkey leftover ideas?

Hello Cathletes,

What kind of creative and unique recipes do you all have for leftover Christmas turkey. My two usual suspects are Turkey Indian Curry and a BBQ turkey pizza. I think I tried turkey enchiladas one year and they were gross! Who has a creative turkey cooking side? I'm re-watching Julie & Julia so totally inspired!

Hi Pam--

If you go to epicurious.com and type in quick turkey curry, there is a very good recipe that I have used many times. It could be too much like the curry recipe you already use, but you might want to take a look. I also take the whole carcass and boil it down to make soup, strip the carcass clean and then chop up some turkey, throw in leftover dressing to thicken and some veggies like carrots and onions to cook until they are soft. Very simple but very tasty.
 
My friend made a cranberry chicken salad for Christmas Eve that was really good!! You could prob sub in turkey for the chicken:

Marinate Turkey in the following for about an hour:
1 package onion soup mix,
16 oz of cranberry sauce
8 oz of catalina salad dressing

Next, bake at 300 for 1.5 hours

For the salad:
1 tablesoon of relish
Mayo to taste
dash of lemon juice
salt & pepper
red onion & scallions to taste

Mix the salad with the turkey and viola! I was hesitant to try it but it was actually really good!!
 
Okay, these recipes sound sooo good! I'm going to get cookin'. I'll do some smaller portions the first time in case I goof up!
