Sweet potatoes, any good healthy receipes?

Hello there, I just discovered sweet potatoes. I was always thought that I would not like them since I am no a big potato fan but I thought that I would try them since they were listed in the BFFM book as being a good food to eat, and guess what I love sweet potatoes. So here is my question, does anyone have any good, healthy sweet potato receipes? Thanks:9
 
Hey there! Sweet potatoes are excellent! The only way I eat them is baked. I usually squirt them a couple times with I Can't Believe It's Not Butter spray when they come out of the oven. To me, adding sugar and other sweet stuff just ruins their nutritional value.

I usually just bake them too. I like them with a little vanilla extract (just a teensy weensy little bit), cinnamon, s&p. I also make baked sweet potato fries--just cut them into strips, season with s&p, drizzle with evoo and toss to coat evenly, then bake @ 425 for about 20 minutes, turning after 10 minutes. I love them.

I came across this interesting burrito recipe. I'll have to dig it up at the house. But it's something like: bake and mash the potatoes (don't add anything). Cook some beans. Grate some cheese. Roll everything into your favorite type of tortilla. Sounds weird, but it is actually pretty good. I can't remember what seasonings to use, but I'm thinking cumin might be good. I'll see if I can find the actual recipe and post later.
 
Try www.epicurious.com It's a great website and I think they have something like 200 recipes for sweet potatoes. I could fritter the day away on that website (until I found the Cate site, that is ;) ). I'm looking forward to Shannon's burrito recipe.:9

I cut them into sticks like french fries, toss with a little olive oil (just a little to prevent sticking), S&P, and herbs. Thyme and rosemary are 2 of my favorites. Bake at 425 for about 15 min. They are a great, healthy alternative to french fries as a side.

Also, mashed sweet potatoes are great as a bed under a nice piece of wild salmon or a side with lean pork. You can use lf milk or ff half&half instead of cream and sub your product of choice for butter. I usually skip all that and just mash 'em up with olive oil, S&P and/or herbs. They have enough flavor on their own without adding a bunch of extra stuff IMO.

Sweet Potatoes are one of my favorites!

I like to cut them into cubes. Then I melt some butter and add some curry powder and brown sugar to the butter. Pour it over the potatoes, add a bit of salt (and cayenne pepper if you like spicy food) and bake at 425 for about 20 minutes or so.

For a healthier version, use olive oil and omit the brown sugar. It's still good!

Oh, and sweet potato soup is delicious. There are tons of recipes for it if you google or go to epicurious. I especially like curried sweet potato soup with some peanut butter added. Everyone I've made it for has loved it.
 
I have a recipe I can dig out if anyone's interested - it's for a Southwestern Sweet Potato Salad. It's really different - some celery, lime, chili powder, vinegar (I think) and canola oil, from what I recall. (I remember the flavor, but not all the ingred.) It was NOT your typical sweet potato dish, is all I can say! It was in a newspaper article about good nutrition, so it's pretty healthy, and I made it for a summer cookout earlier this year.

Personally, I loved it, but my MIL and DH were not too impressed. (they're pretty traditional in their eating style and this was a little over the edge for them, I think! :) I like it because it's not overly sweet but blends the flavors together for something totally new. I actually baked some sw. pot.'s yesterday with this recipe in mind - as soon as I can dig it out!

Let me know if anyone's interested and I'll post it (But, honestly, I won't be offended if it sounds too off-the-beaten-trail - I do tend to have exotic tastes in food! ;-) )

I just microwave them and eat! Either "naked" (the sweet potatoes, not me;-) ) or sometimes with a sprinkle of cinnamon.

Boring, maybe, but I love it!
 
Here's a great recipe for you.

Sweet potato wedges

Preheat oven to 425 degrees.

Cut 2 sweet potatoes into wedges (for fries) and set aside.

Place the following spices into a gallon sized ziplock bag:
1 teaspoon ground fennel
1 teaspoon ground anaiseed
1 teaspoon ground onion

Place sweet potato wedges into baggie, close, and shake to coat the sides of the potato wedges.

Remove wedges and place on a cookie sheet or pizza/cookie stone.

Bake for 20 minutes, flip wedges over and cook for another 20 minutes.
