Steel Cut Oats.

I bought some yesterday for the first time after hearing many of you rave about how good they are. I put off buying them b/c the cooking time turned me off although Im sure they are quit faster in the microwave.
There is no dif in the nutritional value, if anything it has less nutrition and higher cals and not so much in my bowl I might add.
They are good but I was just wondering what all the fuss was about. Is it b/c of the taste?... Is it the texture?....Does it keep you fuller longer?....Just wonedring.
I do like them but I was expecting to see that it was higher in protein.

I enjoy them on occasion (with added protein powder) but never understood the fuss either. Frankly, I like my Kashi cereal which has far more fiber and protein.
 
I like them instead of regular rolled oats because of the texture. Rolled oats always seem slimy to me. Ick. And I just can't eat the dry cereal. Just can't do it. So the steel cut oats are perfect for me. Actually, I mix them half and half with bulgar wheat, which I like even better.
 
Here's a recipe that uses Steel cut oats.

Soak steel-cut oats in buttermilk to soften them but still preserve a nice crunch. This cake makes a great afternoon snack or, with a maple syrup glaze, dessert.

1 1/2 cups buttermilk
1/2 cup steel-cut oats
1/2 cup oat flour
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup packed brown sugar
1/4 cup butter, softened
1 1/2 teaspoons vanilla extract
1 large egg
Cooking spray
1 tablespoon powdered sugar (optional)

Combine buttermilk and oats; cover and refrigerate 8 hours.
Preheat oven to 375°.

Lightly spoon flours into a dry measuring cup; level with a knife. Combine flours, baking powder, baking soda, and salt, stirring with a whisk.

Place sugar and butter in a large bowl; beat with a mixer at medium speed until light and fluffy. Add vanilla and egg; beat until well blended. Stir in oat mixture; beat until well blended. Add flour mixture, beating just until moist.

Spoon batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 375° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack. Cut into squares. Garnish with powdered sugar, if desired.

Yield: 12 servings (serving size: 1 square)

<And my subsititutions. I didn't have buttermilk, so I used a 1 Tbsp. in vinegar disolved in 1 1/2 c. skim milk (or you could use 1 Tbsp. lemon juice). Then I used all 1 1/2 c. of wheat flour instead of the oat/ regular flour & I skipped the powdered sugar. My kids loved it!>

I prefer to eat Steel Cut Oats for two reasons.

1. I am trying to reduce process foods in my diet. Rolled oats have been steamed and rolled, whereas steel-cut oats are merely the oat that has been cut into smaller pieces (typically in two or three pieces). I like to buy whole oats and put them in my vitamix for a very short amount of time to create my own steel-cut oat at my preferred consistency.

2. I prefer the texture of steel-cut oats. Rolled oats just feel like mush to me. Just a preference, my husband actually prefers rolled oats, to each his own!

Sometimes I make them the night before. You can bring 4 cups of water to a boil, stir in the oats, turn off the burner and cover. When you wake up in the morning they are perfect. Just microwave for a minute or two and I like to top with ground flax seed and a big pile of blueberries!

Monica thanks for your compliment! very nice of you! I will definitly eat the oats I have bought b/c I have been really enjoying them. I cut up a banana and put on top of them and I sprinkle some of the caramel mixture (only 15 cals per tbsp) over that. Really nice! I like the crunch. In the meantime, regular oatmeal doesn't bother me, I can eat either or. I just though that there was going to be some crazy nurtrtional value to them so I was alittle disappointed to see that there wasn't.

Also, thanks for the recipe. I think I will try baking that cake this weekend.
