Spinach

Speaking of collards and greens, I want to start eating more fresh spinach. How do you cook it? What gives it a good flavor? My brother use to add vinegar to it and eat it all the time. Any suggestions?

I love baby spinach. I take large handfuls of it and steam it until it's soft, but not so soft that it's really limp.

I eat if fresh, with some cottage cheese and salsa.

Sometimes, I'll lightly steam it, then place it on top of chicken that is baking in the oven and sprinkle some low fat cheese on it.

I use fresh spinach in place of or in addition to lettuce in salads...

This is a Weight Watchers recipe. Even my husband likes it. 4 points per serving. It calls for frozen spinach, but I just use fresh and steam it before adding it to the recipe. I just love fresh spinach!

Spinach Quesadillas

2 serving cooking spray (5 one-second sprays per serving)
1 medium shallot(s), minced
1 medium garlic clove(s), minced
10 oz chopped frozen spinach, thawed and squeezed dry
1/4 cup feta cheese, crumbled
1/2 cup grated Parmesan cheese, such as Parmigiano Reggiano
2 Tbsp fat-free creamer, such as half-and-half
1/4 cup canned cannellini beans, drained, rinsed and mashed
1/4 tsp black pepper
1 tsp fresh lemon juice
4 medium fat-free flour tortilla(s)
1 medium lemon(s), quartered
1 serving cooking spray (5 one-second sprays per serving)


Instructions


Coat a 10-inch skillet coated with cooking spray and heat over medium-high heat. Add shallot and garlic and sauté 1 minute. Stir in spinach. Cook until spinach is hot and liquid evaporates, about 3 minutes. Remove from heat.


Add feta and Parmesan cheeses, creamer, beans, pepper and lemon juice to skillet; stir until well-combined.


Spread 1/2 cup spinach mixture on half of each tortilla. Fold tortillas in half to enclose filling.


Recoat skillet with cooking spray. Place 2 folded tortillas in skillet and brown over medium heat, about 2 to 3 minutes per side. Set aside and cover to keep warm. Repeat with remaining tortillas.


Cut each tortilla in half to form quarters. Serve with lemon wedges. Yields 2 quarters per serving.
 
I do a lot of different things with spinanch but one of my favs. is heat up 1-2 tablespoon of olive oil, mince a clove or two of garlic, saute the garlic in the oil just to infuse the oil, throw the spinanch either baby or regular but I use baby and fast cook it but turn the heat off before you put the spinanch in it. I usually top it with salt, pepper, low fat feta, parmesan or goat cheese. YUMMY! It tastes GREAT with chicken.

Two words:

Spinach Salad


I get the bagged salads at the grocery store - they have Baby Spinach. Just toss it with some veggies and your favorite dressing, and maybe some grilled chicken, and you're good to go. And it is loaded with vitamins! Love it! :)
 
When I grow spinach in my garden I have bushels of it to eat, since on one else in the family will touch it. I like to cook veggies and a protien (meat, chicken, fish etc) with Pam Olive Oil spray, and when things are browned and dry in the pan I add spinich and throw in a splash of chicken broth. This make a big steam flash in a hot pan. I like to put in only enough splash for the spinach to lightly steam and the broth to evaporate so the mix isn't all juicy. It makes a perfect yummy healthy meal, and the kids like the big flash production :)
