I make these all the time and you can change up the seasoning any way you like, just follow the same process.
This works even better if you have a convection oven (easier, lower maintenance, and no turning required) but I've done them in the toaster oven or big oven for years.
Some seasoning mixes I've used are:
Balsalmic Vinegar
Thyme
Basil
Oregano
Garlic Powder
Sea Salt
Lime Juice
Chili Powder
Onion Powder
Paprika
Also great with just olive oil, pepper, and sea salt
Cut the potatoes into wedges, strips, or rounds (strips and rounds cook the fastest) and toss in a bowl or plastic bag to coat with all ingredients.
Turn out onto a baking sheet in a single layer. (LINED WITH LIGHTLY GREASED TINFOIL, unless you like scrubbing LOL!)
Place in a preheated oven (400 degrees) for about 15-25 minutes depending on desired level of doneness, oven type, and shape you cut the fries into. I always broil or crisp them for the last few minutes to get a nicer texture. Great with homemade ketchup or bbq sauce (way less sugar with homemade)
