Speaking of baked sweet potatoes

I almost always spray a little PAM and sprinkle with cinnamon. If I am at a restaurant, I like to use there brown sugar/butter/cinnamon mix, but only on occasion. It tastes like dessert to me!!! YUM

I like a little brown sugar, some cinnamon, and some I Can't Believe it's not butter...Mmmmmmm.

Come on! Where are my fellow peanut butter-aholics? Cinnamon and natural peanut butter are my weapons of choice. Especially when hot and melty, mmmmm...

I eat them without anything on it.

I have a question though. Does sweet potatoe contain carbs? I always think it has starch and sugar, which might increase carb intake. I hesitate to eat it often. Am I right?

Yes,
Sweet potatoes contain carbs, but very good for you complex carbs in a fiber and vitamin packed little formula and so can be a regular part of a well-balanced diet. Especially if you eat the skins and don't pair them with brown sugar, butter, and marshmallows, aka-Thanksgiving, or in pie form:D

They are so sweet that I love them plain. A drizzle of maple syrup makes DH very happy. And he grumbles if we have vegie burgers without the oven roasted sweet potato fries.

With summer heat, I've been steaming vegies for salads, including sweet potatoes. Big batches that last for most of the week.

Thanks, Mattea. I always took the skin out when I ate them, did not know it is a good part. I will eat it all without a piece left from now on...:7

Just had one tonight... splenda, cinnamon and Smart Squeeze. Boy was that thing good!!

LOL... when I go to restaurants, especially our favorite steakhouse, Longhorn, I always ask for straight cinnamon, no cinnamon sugar. I then put a packet of Splenda in it. I just they know when the "straight cinnamon lady" is there....:)


Sarah, I have a recipe for sweet potato fries somewhere. I will have to hunt it down. It uses balsamic vinegar. They are unbelievably good.
 
Jane, I was thinking that splenda and cinnamon would be great. I make whole-wheat cinnamon rolls with that combination. I love balsamic vinegar and make oven fries quite often. Could I get your recipe?

I think I'll be going to the grocery store tomorrow because you guys have made me crave sweet potatoes, and I'm currently out.

By the way, I use yams because that's what is available around here. Is there a difference? I was under the impression that yams had more flavor, but I don't know much about sweet potatoes.

I make these all the time and you can change up the seasoning any way you like, just follow the same process.
This works even better if you have a convection oven (easier, lower maintenance, and no turning required) but I've done them in the toaster oven or big oven for years.
Some seasoning mixes I've used are:
Balsalmic Vinegar
Thyme
Basil
Oregano
Garlic Powder
Sea Salt

Lime Juice
Chili Powder
Onion Powder
Paprika

Also great with just olive oil, pepper, and sea salt

Cut the potatoes into wedges, strips, or rounds (strips and rounds cook the fastest) and toss in a bowl or plastic bag to coat with all ingredients.

Turn out onto a baking sheet in a single layer. (LINED WITH LIGHTLY GREASED TINFOIL, unless you like scrubbing LOL!)

Place in a preheated oven (400 degrees) for about 15-25 minutes depending on desired level of doneness, oven type, and shape you cut the fries into. I always broil or crisp them for the last few minutes to get a nicer texture. Great with homemade ketchup or bbq sauce (way less sugar with homemade)
