south beach dieters: cheese substitute???

I'm planning to start south beach in January (post-holidays, of course!) and I noticed that the plan recommends cheese in almost all snacks and meals. The problem is that I hate cheese. I always have and I don't know why, but I can't stand the stuff. I'll eat yogurt, but no cheese. What would be a good substitute? I noticed that in Phase 2 it uses hardboiled eggs as snacks, but not in phase one, although as I understood it eggs were not limited in phase one. Just a bit confused and would looooove your input!!!:) :)
 
Ashley, as far as I know you can eat eggs to your hearts content and honestly, even if they are not I can't see as that would be an issue.

I wish I didn't like cheese.

Oh, and don't hesitate to put the nuts in your diet. THey will help you feel satiated.
 
I didn't think that the eggs would hurt either. I just wish that they didn't recommend so much stinkin' cheese!!!x(
 
That's really strange--I don't understand why eggs wouldn't be in phase one either. They have zero carbs.

I love cheese too, so that hasn't been a problem w/Atkins for me. What kind of substitute are you looking for exactly? I mean, a snack substitute or something that accents your meals?
 
Maximus: eggs are used in phase one, I just noticed that in the suggested meal plans that it doesn't use them as snacks at all until phase 2. It usually recommends some sort of cheese as a snack. Don't get me wrong, I don't intend to follow the meal plans b/c I'm too picky (no red meat, poultry or cheese to name a few!) but I was just glancing at them for an idea. It recommends a skim mozzeralla stick for a lot of snacks or ricotta for desserts and I can't do that!!!:D x(
 
Well, for sweet snacks you can have jello & whipped cream (zero carbs), sugar free cheesecake (about 7 carbs per serving), peanut butter & Fluff (about 12 carbs--I know this sounds crazy but it's just as good w/o the bread & one of my favorite snacks).

Nuts are good for a non-sweet snack, they're about 7 carbs per quarter cup. You can eat pretty much any kind of nuts you want--macadamias are actually the lowest carb. Also I munch on celery/ carrots/cucumbers & cream cheese (hope you don't hate cream cheese too, but you could probably substitute peanut butter--it has carbs but not much). All lunch meats are OK--I know you said no red meat but pepperoni is one of my favorites, or you could just roll up some turkey or ham & dip them in a condiment.

Low carb diets are much easier than people think, you just have to think outside the box & get a little creative. :)

Something that I just love is a Ricotta cheese thing. You should try it cause it tastes nothing like cheese.

1/2 cup part skim Ricotta, 3 pkgs of Splenda, 1 tsp Pumkin Pie Spice and 1/2 tsp maple extract. This sounds wierd, too but I'm telling you it's a real treat.
 
Hey Candi, I would love to try this. Do you know the nutritional fact for this? Doesn't really matter if you don't know just curious.

You might try www.southbeach-diet-plan.com/ I have come up with a lot of ideas from here. The recipe & food area has discussions. You might even ask there. It is geared for the beginner. I have both of the books and have tried quite a few of the recipes. I believe you don't have to eat cheese for snacks. Whatever is a phase one dish should be alright. I am sure any of the vegetable dishes or salads could be used as snacks. They also have some toasted garbanzo bean thing everyone says is good. I have some but have never tried the recipe.

No Haydee, not really.

Well, let's see. The calories are about 90, I think. The protein is about 8 or 10 and I'm not sure about the carbs but it's not much. THe calories come mostly from the Ricotta because the spice and extract have almost nil.
Sometimes I add different extracts or flavorings for a change.

I find this very yummy.

Some Italian pastry fillings (Cannoli's) are made with full fat Ricotta and real sugar so if you know that, this doesn't sound as wierd.
