SOS! Need Help From Our Chefs!!!

Okay, my farm has bailed on me and I have no goose to cook :p (tee, hee) for Christmas dinner!!!

What would be a good, but relatively easy replacement besides turkey!

Would love some ideas!

On my knees begging frantically as I usually have my menu complete by now, but this puts a huge damper on it!
 
How about a big slab of salmon? (Fish is the only animal I eat so that's what I'm doing).

If you want to do poultry - have you every done duck?
In my past meat-eating days, I did a crown roast once.
 
For an easy roast beast that still has some "wow" factor, I like a nice pork loin roast. It's very forgiving (cooking-wise) and you can dress it up with a lot of different flavors.

mmmm dh's work did one the other night with fried apples. not sure what the glaze was but they topped it with fried apples. we have done a cheese stuffed one before. i forget the name of the cheese dh uses but its pretty gourment stuff and with fresh herb rub really works nicely.

dh is really the chef not i so he would be better at coming up with the recipes. he is actually wanting to attempt a cheddar beer soup only b/c he wants to make pretzel bread too LOL.

Thanks for your suggestions! I just get so stuck sometimes when I've gotten my heart set on something in particular!

I have done duck before. The cornish hens sounds interesting and the salmon might be a good idea. Have to run all this by DH and see what strikes him, then I can plan the rest of the menu and get my butt to shopping!
