So I bought a big vat of coconut oil...

And attached was a recipe that I tried tonight for dinner. Very easy and pretty good!

Coconut Saute
1 tbsp coconut oil
1 lb tofu, chicken breast, or white fish
1 tsp dried minced garlic
1 tsp ground coriander
3 pairs fresh Kaffir lime leaves [oh yeah- those- LOL I used a lime]
1 lime cut into wedges
Melt coconut oil in skillet. Sprinkle the meat or tofu with the spices and place in the skillet when oil is hot but not smoking. Tip each cutlet with one pair of Kaffir lime leaves [I just cut open the lime]. Put a lid on the skillet and keep covered until meat or tofu is thoroughly cooked. Add Celtic Sea Salt [LOL this recipe!] and cayenne pepper to taste. Keeping the lime leaves on the cutlets, serve on plates with lime wedges.

No, I couldn't taste the coconut at all. Bummer! But the fish I made (halibut) was really good and I'm curious what will happen when I make it with tofu. I went heavy on the garlic and lime, since I know I like those. ;) I also went a bit heavy on the cayenne pepper. DH assumed it was paprika and was coughing for 5 minutes. Whoops.}(
 
OMG I laughed out loud when I read that about the lime leaves. What IS a Keffir lime???!?! I've never seen one!

I just used a real lime, cut it up and put it on top of the fish. I also used ground coriander from a jar, and non-dry garlic from the jar of chopped garlic we always have around. Oh yeah and regular kosher salt too.

I went rather low-brow on the recipe and it still turned out fine, was my point! ;)
 
LOL!! Ok good I'm not the only one then who doesn't know what the heck a keffir lime is:+ OK I am trying this recipe..i'll let you know how it comes out:D!

So have you noticed any changes in your appetite as you've incorporated the coconut oil into your diet??
 
A little bit, yes! I don't binge so much after dinner. The other days I've been working every day so I don't eat much at work anyway. But the dinner part is great!! Okay, LOL, except for tonight, the M&Ms are calling...

I'm curious how the recipe goes with something other than halibut. Enjoy!

Keffir lime is a leaf that has a strong lime flavor. You can substitute with lime.

Coconut oil, (for us humans) has the nutrition value of lard. If it makes you lose weight, then I would be surprised. But hey, you never know, right.

It's funny how popular opinion/perception can swing like a pendulum. I was taught (by my college chemistry professor and others) that oils that are solid at room temperature (butter, lard, crisco etc) were saturated fats and bad for you. But then I thought soy was good for you too. I guess the things that drive popular opinion (economics? politics?) are not always trustworthy.

Actually, whole soy FOODS are good for you (tofu, soy milk, edamame, tempeh). One only needs look at the populations that eat large amounts of these foods to verify the reduction in risks of certain cancers. It's when the protein and isoflavones are separated (according to the most recent "Women's Health" magazine) that soy can become harmful (like soy protein isolates and concentrates and foods made from them like luncheon 'meats' and burgers and protein powders). I wasn't sure what the actual reason was, but the WH article confirmed my suspicions about the differences between actual soy and products made from soy proteins.
 
Janie, where do you get your information from? Clearly not from current information. Have you even read into anything about coconut oil? I think not. And the nutrition properties of lard. What a joke. JOKE. And lard is bad for us right? Do you know that coconut oil is not being used in aids treatment as it has been shown to decrease load to undectable levels. Or that coconut oil has the ability to kill nearly every dis-ease it has come in contact with in petre (which, i'm more than aware, is not like the human body). Did you know that coconut oil is the worlds most healthiest fat. Or that coconut oil is the lowest calorie fat, 6.4 calories per gram, compared with lard, olive, vegetable and every other oil. Did you know that coconut oil is digested straight away in the human body as engery. Just like a carbohydrate, but unlike carbs, does not realise insulin (making it idea for diabetics). And, finally, Janie, coconut oil is also able to fight yeast and fungi infections, both internally and externally. So i'm thinking that coconut oil is far, far better for you than lard.

BTW, I wasn't cooking it in oil for the oil's nutritional value- it was just what the recipe said to do! ;)

An amazing book is called Eat fat, lose fat. Very informative.
 
Hi All:

After reading the coconut oil threads I started doing some research and reading. It does seem that there are some promising results/studies on coconut oil, but it also seems as if a lot of these are preliminary/new studies/not tested on humans. I would be cautious only because we have been through this in the past: newbie research suggests something is positive/negative. The media gets a hold of the info and all of a sudden this "something" become the end all and be all of health or the Worst Thing on Earth. The public flocks to it or from it. Food manufacturers get on the bandwagon, adding or yanking the "something" to/from practically all their foodstuffs. Then, lo and behold, five or ten years down the road, more longterm findings reverse the prevailing zeitgeist on that "something." So I am always a little questioning of the latest "miracle" substance/food.

How many things can we name that were once good for us and are now bad, or bad for us that are now good or at least ok?

I agree with you, however, the natives whom live on diets that contain huge amounts of coconut oil have no diseases (very little) of cancer, heart attacks, strokes, etc... that we humans have. And there diet consists of 50-70% fat, most of which comes from coconut oil. Plus if it were bad these island folk would have died out years and years ago.
