snacks when busy

I'm looking for some super easy snack ideas. I'm really busy at work and need to just inhale something to keep my blood sugar stable. Besides nuts and string cheese, what are some really fast and easy snack you guys use?
 
I love egg rolls as snacks!

Takes about half an hour or so to make a batch, but then you have 15 that you can throw in the fridge for the week or freeze individually.

Make them yourself (bake, don't deep fry obviously), and they're quite healthy. Easy to customize too, you can really put whatever you want in them. I just made the southwestern ones from another thread and they are delicious! (Dipped in nonfat plain yogurt mixed with salsa.... yum!)

The (rice flour I think?) wrappers are eighty cal each, no fiber, but 3 g protein. Add in some veggies and you're at 100-120ish, depending on your tastes. About the same as string cheese and some baby carrots calorie-wise, but so much more filling. Initially I started making them to have with meals, but I get too full if I eat them with a meal.
 
Celery and hummus, apple with some sort of nut butter, yogurt based dip with cut up veggies. I keep fruit on hand when I have it (berries, apples, pears) and I always have a protein powder on hand to make a shake.
 
I make small meatballs out of ground turkey breast, egg whites, and herbs. I freeze them and then take a couple out at a time and microwave them.

Almonds! They're awesome! I buy big bags of raw almonds at Trader Joe's and keep one in my desk at work and another in my daypack.

Other ideas:

I second (or third?) the cut-up veggies and hummus. I also make a little half-almond butter sandwich sometimes, using one slice of ezekiel bread and a tablespoon of raw almond butter (sometimes with some strawberries, too). Ezekiel bread has 0 grams of sugar, so the carbs are all "good," and this really keeps me going on days when I am up at 4am and working outside all day. Or even when I'm just deskbound all morning.

I'm also a fan of Larabars, and although they are packed with dried fruit which is somewhat sugary, it's all sugar from actual fruit and they're pretty minimally processed, so I think they're probably fine. I also really like the Pure bars, which have a little more protein. The brownie one is delicious, too.
 
My faves:
A whole wheat tortilla with fat free cheddar and hummus.
Hard boiled eggs.
1/2 peanut/nut butter sandwich
cottage cheese
