Hummus:
1 can chickpeas, drained
2 cloves garlic, chopped
1 tbspn olive oil
2 tbspn sesame seed paste (or I just throw in 2 tbspn of sesame seeds)
juice of 1 lemon
Mix hummus ingredients in food processor and blend until smooth and creamy. Can season with salt, pepper and paprika.
Sandwich:
2-4 pita breads, cut into halves
2 tsp vinegar (I like apple cider vinegar)
1 tsp dijon mustard
1 tsp olive oil
spinach
1/2 red or yellow bell pepper
1 large tomato, sliced or chopped
1/2 cucumber sliced
1 carrot peeled and grated
green onions, chopped (small amount)
Warm pita bread in oven or toaster oven. To make the dressing, whisk oil, vinegar and mustard and pepper to taste.
Smear the inside of the pita pocket with hummus, fill with salad and drizzle with the dressing.
I usually make these for 3 days strait since its just me eating them. my kids ate them once but I just decided to give them a half meat sandwich with veggies to dip in ranch.. they liked that better. You know kids. ;-) the veggie amounts are approximate since I make one or two halves at a time.
