sharing a recipe: pita veggie sandwiches with hummus

Hummus:
1 can chickpeas, drained
2 cloves garlic, chopped
1 tbspn olive oil
2 tbspn sesame seed paste (or I just throw in 2 tbspn of sesame seeds)
juice of 1 lemon

Mix hummus ingredients in food processor and blend until smooth and creamy. Can season with salt, pepper and paprika.

Sandwich:
2-4 pita breads, cut into halves
2 tsp vinegar (I like apple cider vinegar)
1 tsp dijon mustard
1 tsp olive oil

spinach
1/2 red or yellow bell pepper
1 large tomato, sliced or chopped
1/2 cucumber sliced
1 carrot peeled and grated
green onions, chopped (small amount)

Warm pita bread in oven or toaster oven. To make the dressing, whisk oil, vinegar and mustard and pepper to taste.
Smear the inside of the pita pocket with hummus, fill with salad and drizzle with the dressing.

I usually make these for 3 days strait since its just me eating them. my kids ate them once but I just decided to give them a half meat sandwich with veggies to dip in ranch.. they liked that better. You know kids. ;-) the veggie amounts are approximate since I make one or two halves at a time.

A question: when you use green onions, do you use the whole length, or just the white part (or just the green?). I've seen recipes that just use the white part.
 
I think the original recipe called for the white part.. but I like the green part and no I don't think I used the whole length of it. just enough to give it the flavor. :)

Sounds yummy - thanks for posting the recipe. I was on a hummus/veggie wrap kick for a while and got burned out on them after a while. I'll have to try this, though.

One thing, though - when I make homemade hummus,I find that using raw garlic makes it kind of bitter - anyone else notice this? I'm not opposed to garlic,but it was almost too much. The next time I made it I roasted the garlic, and I thought it was much better.

Another thing....I sometimes add avocado. Adds to creaminesss..what's not to love about avocados...mmmmm..

I'm going to the store now for milk - may grab some pitas while I'm there - thanks!

If you cut the garlic clove in half, then pull out the little v-shaped piece that is at the 'root' end and looks a bit different from the rest of the garlic (hard to describe, easier to show!), that's supposed to help reduce the bitterness.
 
Thanks for the bump!! I love hummus!! ;-) I found these awesome pitas from Joseph's, they're Flax & Oatbran pitas that are really yummy! :)
 
Thanks, Kathryn, and yes I do know about the green sprout in the middle. I do usually try to take that out, and really try to buy them prior to sprouting if I can. I may try that again. I don't know,though, I love the smell of garlic roasting in the oven...:p

Anyone ever been to the garlic festival - I think in CA? I watched a show on it once on the Food Network. Garlic ice cream? Hmmmmm...I dunno....

OMG - I was at the garlic festival the one year I lived in Monterey, CA - it was in Gilroy, CA I think. You could smell the garlic from MILES away - even driving on the freeway w/ windows up!!!

avocado would be good too... you could really play with it however you like. I LOVE garlic and could throw like 4 cloves in haha. I guess you could do garlic powder instead too.
