I don't have a recipe, but here's what I'd do:
Take a look at the ingredients in the frozen ones you like, in particular, what veggies are in them, and in what order (ingredients are listed in descending order--most prevalent ingredient listed first, and so on).
Then, use a regular pancake recipe, and add grated, slighty steamed veggies to the mix before making the pancakes.
That's at least a start!
