What does anyone know about protien bars that contain the ing. Fractionated Palm Kernel Oil? Bad or okay if you only have one a day and eat fairly clean.
Thanks,Amy
It's not partially hydrogenated, fractioning is designed to extract and concentrate specific fatty acid fractions. Fractionated palm oil, as found in food products, has a higher concentration of saturated fat than regular palm oil and is used for the convenience of manufacturers who like its stability and melting characteristics. The palm kernel oil is heated and then cooled repeatedly, a portion thickens, and the thinner liquid portion is removed keeping only the thicker part for stabilization of the chocolate, powerbar or whatever they use it for.
The fractioning is not the biggest problem, usually there are no solvents used in the fractioning process. However, palm kernel oil contains about 87 % saturated fat - the bad fat. I wouldn't eat it every day, in fact, I'd totally stay away from it.
