Traildoggie

Cathlete
good morning.

I don't want to be overcrtitical of my DH. I need to vent sometimes. he is mostly a very kind and supportive man who would do anything for me. we have a few small areas of "disagreement"!

I made a really good dish from Eating Well last night. a hit for both of us! a chicken pesto. not hard and very tasty. will stick in a link in a couple minutes. I tried to lighten it by using fat free half and half but that didn't work that well. I will use the cream next time or maybe the fat free 1/2 and 1/2 with chicken broth instead of the white wine. I had some curdling that didn't affect flavor and required an extra step to smooth it out.
20-Minute Creamy Pesto Chicken Cutlets Recipe | EatingWell I highly recommend. make some pasta or rice or grain to hold the sauce.

yesterday was a serious garden day. got supplies for the vegie garden, lots of big bags of manure, lime, phosphate. tilled in the cover crop. takes a week or two for it to die back but time to get planting going for us. so my workout was weeding, raking, digging etc. several hours worth. we start some thing indoors and transplant, others are direct seed. we have our newly constructed garden beds from last spring that need filling out. we transplanted previous existing plants but too soon to see what survived the winter. some shrubs were big plants and transplanting twice in a year probably killed off a few but too soon to tell. everything is budding out and a lot of things blooming and greening up. I love spring here.
had intended to road bike this morning but too cold to be fun. it will warm up but not until too late in the day for us,

cathy good to take advantage of a that energy and get a whole lot done. sometimes you can just run with it!

Today is a rest day for me. Valerie, that creamy pesto chicken looks good. I would use the cream since it’s only 1/2 cup for four servings and substitute chicken broth for the white wine. I rarely drink wine when it’s just the two of us here. I certainly don’t want to open a bottle to use a small amount in a recipe. We all understand the need to vent occasionally!

Diane Sue, great job with CDORNER Basic Step and Boss Loops Glutes and Core. I am particular about chicken also and I avoid those with added broth. Sprouts has good organic chicken but the price has really gone up lately. I roasted a whole chicken from Sprouts last Sunday and it was exceptionally good. I had forgotten that chicken should taste like that. I usually buy packages of organic chicken breast from Costco to keep in the freezer. What was six packages sold together is now three.

Cathy, nice job with P30 Low Impact HiiT. Take advantage of those bursts of energy whenever you can!

Hello to Judy.

I like my Chardonnay so usually have an open box. I would not open an expensive bottle and chick broth would be similar . I use the jarred broth concentrate Costco has. Otherwise I followed recipe. I always pound out the chick breasts so they are evenly thick. I used orzo but would prefer whole wheat. Can’t find whole wheat orzo locally so might try spaghetti. I like whole wheat pasta much better. Also Costco pesto. I adore pesto but don’t have it often.

Finally got back to STS today with Disk 18. Back and Biceps. Not sure if it was the extra days or what, but my biceps, mostly right arm were not into full participations today. Had to drop down a pound of that side for some of the alternating curls and concentration curls. Left side biceps have always been stronger than the right but usually I can do the same weight for both. Going to do back to backs one day this week so I can get back on a Monday, Wednesday, Friday schedule for STS.

Valerie I totally get the need to vent sometimes!

No workout today. I went to church this morning. Looking over recipes right now as I need to get some vegetables and things and plan out some decent meals. While recovering I have eaten a lot of nasty tasting healthy choice meals, and too much fast food type things. Even salads out, have unhealthy ingredients and if they are not brought home un healthy dressings. I have sockeye salmon thawed for tonight and will make a recipe I love that has the salmon rubbed with olive oil and dipped into ground flaxseed( I ground whole in my coffee grinder) then a red grape salsa that goes over it when done. Another that I use often and the original recipe is for salmon, but works for chicken as well. With it you cook the chicken or salmon in a skillet till done, then remove and tent to keep warm while you add chopped zucchini, yellow squash and till crisp tender and add halved grape or cherry tomatoes, sear for 1 to 2 minutes, stir in pesto(they used an arugula recipe and I use my own pesto recipe that I keep small containers of in the freezer. Toss the veggies with the pesto in the skillet and serve on top of plated chicken or fish. They sprinkle with pepper and serve with lemon wedges. I have also used the pesto with broccoli and the tomatoes the same way.
I am glad I am home and in the house. Much needed rain has started coming down. We have some nights this week that will be below freezing. Neighbors have been out this weekend (in the 70's) planting flowers and working outside. I am waiting till April to start that stuff. I Am ready to purchase items needed for lawn and stuff, but people always jump the gun and start too soon. Right now the tulips are peaking out and probably the hyacinths. Last year when we moved in they were beautiful.

Valerie, thanks for the recipe. It sounds good and like you I would change a few ingredients. I tried making a dairy free parmesan from cashews once and decided to go back to good quality parmesan, preferably shredded because I like texture. I like chickpea pasta for recipes, but only a certain brand that is not starchy and sticky. Either that or quinoa or brown rice is good.
I understand, we need an outlet sometimes, and we are here to listen. I think we all have things that annoy each other. I am sure my husband sometimes finds me frustrating at times. We love each other anyway. Marriage takes work. I get it. I am often in the middle of a meal and feel the necessity to go look for things or try to help with a problem at the same time I am cooking and end up with over cooked food and a bit of frustration. Timing is not always great.

Carolyn, Sprouts has always been pretty expensive for the organic chicken. I have been shocked sometimes at the prices of grocery items lately. Chicken and steaks have really gone up anyway. Most meats and chicken do not taste like they used to. THey have done so much to them

we did more garden work yesterday. it was too cold to road ride. later I did chiseled upper body and icy core 2.
medical /dental appts for next two days. unlucky for us. we concentrate appts in a small window so we are free most days. we managed to hit the two sunny days this week for the appointments, made months ago.:mad:
the climate here makes it necessary to get things rolling in march. we can't plant things until later but the soil needs prep. we have a big garden. some things over winter in the ground, like garlic. planted last fall. it's about 5 inches tall but needs weeding. its fun to grow. its like onions that are fun too. doesn't save money but needs no work and is fun to grow and harvest.

I tried a lot of pasta types and ended up with barilla whole wheat for most things. never found a whole wheat lasagne, so regular barilla/ronzoni. I didnt like the texture of any of the non wheat ones I tried, rice, 'chickpea, lentil. I tossed every one after one try. I like good parm but DH thinks it's gritty. I use Asaigo a lot of the time. similar flavor but less gritty, melts well. I can usually find it in a small block or pre grated at QFC which is a Kroger store.

ETA I love the idea of flax seed on salmon. I will give it a try next time I get salmon. I have flax seed and can grind it up when I need it. interestingly, I have a friend who is extremely allergic to flax which seems odd nothing else, just flax. I get very picky about texture. I tried all the odd pasta but I have no reason to avoid wheat, and so was no contest.
Judy I was just going thru some NYT recipes and "your" salmon recipe is in the group of fast and easy dishes. it has mustard and brown sugar and into the air fryer.

with gas and diesel prices soaring upward, it will be reflected in everything transported by truck. food prices are going up fast.

done with appointments today. need a small repair on a filling that will be done soon but both dentist and cardiology all OK. ophthalmology tomorrow.

Today I did Low Impact Sweat, both workouts. That was 46 minutes and 328 calories burned. Average heart rate was 135 and maximum heart rate 174.

Cathy, great job with STS disc 18, back and biceps.

Diane Sue, your salmon dish sounds good. Is that one of the Michael Symon recipes? I always try to buy the Sprouts organic chicken when they have it on special. A whole organic free range chicken is now $17.00-18.00. At Costco the whole organic was in a pack of 2 chickens for around $20, but now it’s one chicken that costs almost as much. I tried a few pasta types, but like Valerie I did not care for them. I stick with whole wheat, but for some dishes I like regular pasta.

Valerie, nice job with Chiseled Upper Body and Icy Core 2. It’s too bad that your appointments are taking the good weather days.

Hello to Judy. Have a wonderful day everyone.

I did Live Express Step with Blasts today. I got a good workout, but it's much too repetitive for me. Biceps and lats are sore from yesterday but will hopefully be better tomorrow as it's another upper body day. Finally had enough rewards points to get Cathe's mat for the step and it arrived today so I'll be able to try it tomorrow. Doesn't lay flat since it's been rolled up so long, so I rolled it the other way and tucked inside my regular mat. Hopefully by morning it'll be better.

Yesterday was a rest day. Today I did a 1 hour Peloton ride after work.

Valerie-Great job with chiseled upper body and icy core 2. That's too bad about your appointments being on nice weather days. I love that salmon recipe. I need to make it again soon.

Carolyn-Great job with Low Impact Sweat. The price of chicken is really going up, unfortunately.

Diane Sue-I really like the idea of salmon with olive oil and flax seed. That sounds like something I want to try.

Cathy-Nice job with Live Express Step with Blasts.

It seemed that things were smoothing out with the pandemic receding but not gone yet. this could turn around quickly so I am not relaxing all that much. I am anticipating with prices going up quickly that there will be another round of buying/hoarding food and paper products.
I need to hit costco today anyway. bought new windshield wipers last week with sizes we needed. it was a lesson to learn the front wipers are two different lengths. yes, for one normal subaru forester I need 3 different length wipers! lesson learned.
I love salmon. I hold out for fresh since I get it so seldom. DH is a lost cause on that subject. If they have any, I will try the flax recipe. I always have to freeze the rest. not to sound like a fish snob, but if you can get alaska salmon it's way better than atlantic farmed fish. fresh salmon may be a regional thing because it's available here pretty often and expensive.
no workouts yesterday. today later. morning appt today.

This morning I did P30 Perfect Pump Upper Body for 39 minutes and 188 calories burned. Average heart rate was 120 and maximum heart rate was 151. I decided to do the extended stretch which was an additional 8 minutes.

Cathy, nice job with Live Express Step with Blasts. There are some workouts that just don’t click with us. I’ve had that happen. I’m sure that you will enjoy the step mat.

Judy, good job with taking a rest day and doing a 1 hour Peloton ride after work.

Valerie, you are lucky to have access to fresh wild salmon. As I have mentioned in the past, I order mine from Vital Choice, a company based there in Washington. It is delicious prepared very simply. I have discovered that I prefer sockeye to other varieties of salmon. I tried reef net pink salmon with my last order since it is only available for a short period every other year. It was good but much milder in flavor than sockeye. We are actually having salmon for dinner tonight.

Hello to Diane Sue.

I did STS Chest, Shoulders and Triceps today. This week puts me half way through and for some of those I was left wondering how the heck I can keep going up in weight! I did manage to do everything today, but it sure wasn't easy. I tried out the new mat today and it's great! So much better than using my regular mat.

Judy nice job with the Peloton ride!

Carolyn great job with the PP Upper Body!

Valerie what a pain to have three different wiper sizes. I don't have a rear wiper on my car, which at first bummed me out, but the back window on my car is at an angle where little lands on it. Really weird and I don't understand why, but it's good. LOL

No workout today. I went to the game day with my friends, and we did a late valentine party. Yesterday was physical therapy.

Carolyn, yes it was the Mychael Symons Fix it with Food cookbook. I have to cut out a lot of the olive oil he puts into recipes. To me it is way too much fat. Nice work with Low Impact Sweat and Perfect 30 pump upper. Whole Foods sometimes has king salmon. It is really expensive, and I have never tried it.

Oh, and I forgot he has you coat the salmon filets with Dijon mustard before the flaxseed and drizzle oil on before baking.

Valerie, I need to get an appointment for my eyes and to get a field vision test. I am so behind on appointments with the moving and the shoulder issue. Everything is going up. All of the utilities have gone up, even places like Amazon and Netflix have raised their membership costs. The thing is most incomes are not going up. This is not a good sign. My little Chevy Spark has 3 different sizes of wipers. It seemed odd, but the front windshield is really large and the hatch back has a shorter wiper. The two front are different sizes.

Cathy, I had a step mat, but over the years it started to come apart. They are really nice to have. Much more comfortable when lying on the step.

Judy, nice work with the Peloton ride.

This morning I did Rev’d Up Rumble for 41 minutes and 277 calories burned. My average heart rate was 130 and maximum heart rate was 151.

Cathy, great job with Chest, Shoulders, and Triceps.

Diane Sue, it’s wonderful that you could attend your Ladies Game Day. King salmon is one of the varieties that I don’t like much because it’s higher in fat. The taste is not appealing to me.

Hello to Judy and Valerie.

we went to xc ski this morning but snow was too icy and it wasn't going to warm up enough so we snowshoed/hiked instead. 2.5 hours. warm in the sun but not many sunny spots along the shady road.

there are different types of salmon. coho, kind or chinook, pink, chum, and sockeye. sockeye are the most likely to be found in stores and restaurants. I'm not a "fishing" person. I caught salmon one time long ago. OMG I was so sea sick! we were out all day and the only time I wasn't barfing in the bathroom, I was fishing.
sockeye is the best tasting from what I read. when available, that's what I buy. the king / chinook are bigger and the one the orcas go after. I don't think I've ever eaten king. salmon are not as plentiful locally as they were when I moved here in the early 1970's. it took a while but the damns on rivers like the columbia are great for cheap hydropower but the fish can't get back up the rivers to spawn so the population has dropped off. nobody thought about fish ladders back then because there were so many fish.
no fresh salmon to be found yesterday. I still will try that flax one when I get some. I love olive oil but not huge amounts, I brush it on to cover the surface lightly and that's good. I dont like "no fat" but I dont like "high fat " either.

Yesterday I did KCM Cardio Fit workout 1 and Power Splits, Upper Body only. For the Upper Body work, I added another round of triceps and am really feeling it today, in a good way. Today I did a 45 minute Peloton Power Zone Ride after work. I had an early shift today so I was home before 11 am. I'm not a fan of going in at that hour (6 am) but it was nice to be home so early.

Carolyn-great job with P30 Perfect Pump Upper Body and extended stretch and Rev'd Up Rumble. I need to revisit P30 soon.

Diane Sue-That sounds like a fun party. I hope your PT is going well.

Valerie-Awesome job with the snowshoe-hike! That's a long time to be out.

Cathy-Great job with STS Chest, Shoulders and Triceps.

No workout for me today. My husband had a neurology appointment this morning so there wasn’t enough time for a workout.

Valerie, nice work with the snow shoeing/hiking for 2.5 hours.

Judy, I like the combination of Cardio Fit and Power Splits that you did. The next time that I do Power Splits Upper I plan to change my position for the rows. Doing them seated felt awkward and my back was hurting slightly afterwards. Next time I will do them standing up.

Hello to Cathy and Diane Sue.

another nice day today, cold in the morning. mid twenties. we went to the park we hike in often. really a good workout. about 2.5 hours. uphill to begin with. saw some porpoises from a long way off. once you know what to look for we usually see them here. the trail goes steeply up and downhill to cliffy areas above the water. its not "killer" difficult but definitely not flat. we barely sat down on the rocks above the water when we saw a whale spout! the coolest thing!. we get whales here in the Sound in spring and summer. probably a humpback. I've gone on whale watch tours before both here and in hawaii, and seen whales off the oregon coast but this was the best! it is so much better when you come upon things yourself, rather than being led to it by a tour guide. very close in to the shoreline, maybe 30 feet? but a ways south of us, but no trail goes by that area. it spouted and dove and surfaced several times. saw at least 6-7 spouts. might have been two whales. very hard to tell if you are seeing more than one, or the first one resurfacing. saw the whole length of the whale, and the huge tail flip up and down as he dove. also saw porpoises and lots of sea birds a really good morning!

Judy I'm really an outdoors person. I(we) don't backpack as much as we used to but we backpacked and dayhiked in many states in the west. our longest backpacks were for over a week. some things are harder than they used to be, other things easier. its harder to get away from people these days, but gear has improved greatly so supplies don't weigh anywhere near as much as they used to. plus we are a whole lot older. npot ready to hang up my boots yet.

Today I did P30 Perfect Pump Lower Body+Lower Body Bonus+Extended Stretch. My time was 52 minutes with 206 calories burned. Average heart rate was 123 and maximum heart rate was 242.

Have a great day everyone.

did a mountain bike this morning, 1 hr 45 min. our usual local ride. we spent time looking at ducks in the lake, and the roads were recently graveled and not pounded down well. made for unstable surface in some places so had to slow down. 40 degrees so about as cool as we choose to ride.
