Good Morning Peeps

I woke my DH up at 5 so he go for a run. I am getting him back into his exercise and better eating regime. Let's just say he thought it sounded like a great idea, until 5am........:eek::eek::eek:
Then he will watch the boys while I do a Cathe DVD. Haven't decided yet

Dani- how about a "little hair of the dog"......
And yes, I laughed very hard and so wish you had those little green faced UNsmileys for your post. Cause I know how it feels. Well, since you taught me how to properly treat a cold anyway.:D:D:D:D:D:D:D

Karin and Wendy- keep up the great recipe links. I am learning something new everyday. I am Not a Crook,, I mean I am NOT a COOK!!! So I'm not stealing your ideas, just kinda borrowing a few. And they are delicious.

Jerry- what is in store for you today??? If you say bootcamp or ME I'm going back to bed!!!! I am so far behind I couldn't dream of doing either one.

Ellie...I'm doing Muscle Max today, want to hit the entire body, and this one allows me to do it without the torture factor of that other combo you just mentioned...there is no way I'd get through that today!!

OK, I'm still sick. You know--congested, watery eyes, look and feel like crap, blah blah. I could probably do a workout today if I kept a tissue in hand, LOL, but won't. I'm aiming to get back at it tomorrow so I'll let you two workout for me today, 'kay?

I did wake up at 6:19AM and suddenly remembered Houdini is out of milk. And Houdini loves her milk (she's into dairy like her mom!) so I throw on a sweatshirt and go to Wal-Mart (closest grocery store) and get her some milk...and then I decided while I was there to get some of my staples for Thanksgiving and tossed them in my cart...Steen's Cane Syrup for spiced pumpkin pie...a Honeysuckle white turkey breast on the bone (6 pounds for like $13--a BARGIN!!)...pure vermont maple syrup for sweet potatoes...and a big Dallas Morning News with lots of ads and coupons. So I was very productive at 6:30AM.

Ellie, glad you are enjoying the cooking lessons! :) Here's a bread that is super EASY and very good--Houdini gobbles it up! I took a pumpkin bread recipe and tweaked it my way, so this really is my own creation:

Wendy's Pumpkin Bread

2 cups all-purpose flour
1 TBSP baking powder
1 tsp ground cinnamon
1/4 tsp. baking soda
1/4 tsp. ground nutmeg
1/4. tsp. ground ginger
1/8 tsp. ground cloves or ground allspice, whatever you have in the pantry!
1 cup sugar
1 cup canned pumpkin
2 large eggs
1/4 cup canola oil
1/2 cup evaporated milk (I use low-fat kind)
*optional 1 cup fresh/frozen cranberries. If you like a burst of tart in your bread, leave them whole, if not, chop them up a bit.

Spray a 9 x 5 loaf pan with cooking spray, set aside. Preheat oven to 350. In a medium bowl, sift together flour, baking powder, cinnamon, baking soda, nutmeg, ginger and cloves. In a large bowl, combine sugar, canned pumpkin, eggs, oil and evaporated milk. Add flour mixture to sugar mixture. Stir until moistened. Fold in cranberries if you like. Pour into pan and bake for 60 minutes. (Check it before taking it out--stick a knife in the center and if it comes out clean, it's done!) Cool in pan for 10 minutes, then turn bread out on to wire rack to cool.

It's SUPER easy! And everyone will think you are a baking goddess. And did you see how little oil is in it? But it will be moist. Good stuff!

Jerry--Does Muscle Max have good premix options? Also, Cathe uses resitance bands in this one, right? I think I need a new weight DVD and this might be perfect...

Karin--THANK YOU THANK YOU THANK YOU for the food gawker site!! Can I tell you, I was there an HOUR last night????? That is way cool!! How did the roasted salsa turn out? What a fantastic idea!! I tried a stovetop salsa once, and it was OK, but I bet the flavors are intensified with roasting!! I printed that recipe off gawker and will try it if you had success with it last night...

OK, off to wait for Houdini to rise and shine...any minute now!

I've been away from my computer for a couple days and was definitely feeling withdrawl symptoms:confused: I got my house completely scrubbed and cleaned so I can start my holiday decorating right after Thanksgiving. Haven't worked out since Friday so I need to get back in gear. I'm thinking kettlebells today along with taking the dog for a long walk.

Ellie~ How are you? I've been thinking about you after hearing the tragic story about your friends. Hugs to you! Good for you for urging DH to get back into exercise and good eating. How did his run go? Let us know what workout you decide on.

Wendy~ Sorry to hear you are still feeling crummy. Get some rest and let Houdini take care of you;) Your pumpkin bread recipe looks yummy!

Dani~ LOL! Your hangover brought back memories of a couple weeks ago when I over indulged and felt like crap. We really need to get one of those green smilies especially with the holiday party season coming up;) Hope you are feeling better today!

Karin~ Glad to hear your presentation went well. Thanks for the recipe link. Hey, I've been meaning to ask you if you were the one who posted a recipe from cooking light for angel hair pasta delight? It was quite a few months ago but I'm pretty sure it was you. It has chicken breasts, spinach, tomatoes, balsamic vinegar, pasta, asiago cheese, bacon bits etc... Anyway, it is a favorite in our house and I make it often.

Good morning! I am taking a rest day. I patched walls and painted a ceiling yesterday, and the dust or something in that old house stirred up my allergies. Painting is a great workout too! I took a nap late yesterday afternoon instead of going to the club for my water workout. I am looking forward to resting and reading after church.

Karin, the pumpkin oatmeal you shared sounds amazing. I love pumpkin. I love steel-cut oatmeal. The regular variety is too mushy for my taste. I am trying to resist the food porn link you shared. I had to get rid of cable because the Food Network was porn to me. LOL! My name is Heather. I am a redeemed food junkie.

Wendy, Tony Romo is such a nice guy. Have you read about his acts of kindness for strangers? Do you have any recipes in your box that would make me love clean veggies? My Southern taste buds like them swimming in butter and cheese. I learned to like salads with a raspberry vinaigrette dressing in the summer. I need some healthy winter ideas. I crave warm and filling foods when it is cold and dark.

Dani (and Karin), I have an OtterBox for my iPod. An OtterBox is a waterproof case for an iPod so you can play in the water like an otter. (You need waterproof ear buds too.) It would be great for running or walking in the rain and also protects the iPod from sweat and dust:

I am out of my mind!!!

I did IMAX 3, up to interval 9. Don't ask me how I did it. It's all just one big blur!!!!:eek::eek::eek: I had a lot of stress and emotions to get out and this seemed to be the way.

Tomorrow is the funerals for my dear friends, they are having the services together. This will be a very hard day for us, but I am thankful that he is with his beloved wife. I know they are together in heaven. The healing can begin for us and our community. And I am sick and tired of being quoted in all the local newspapers and TV. Why do they seem to revel in people's grief??

Anyway, thanks to all my Peeps for their support,encouragment and prayers.

Good morning Peeps!

I am feeling much better today and will do DrillMax or something equally as masochistic... I have 2 days of glutenous behavior to redeem myself from! I will need to do CleanMax and LaundryMax today as well!

Ellie: I'm hoping to match your IMAX3 blur! Cathe's circuit workouts keep me moving and scrambling around trying to figure out what next move is... I'll check back to report later! LOL on DH's 2nd thoughts at 5am! I have done that before, but thankfully DH is pretty self motivated on the treadmill... so much so that I have to pencil in TM time for myself. unfortunately we get home and work out about the same time, so since he doesn't have Cathe to sweat to, I end up not getting TM time as I would like! Please feel all your Peeps and all of Catheland support behind you and your family during your services tomorrow! Hopefully this will bring some closure and healing for you all...

Jerry: MM is another killer for me! but I am loving them (DM, MM, ME)! sadistic maybe, but you can't argue with success... after being off for a few weeks, do what you can and listen to your body and don't push past the wall, just make sure you are not just going through the motions eather :) You'll do great and will feel much better for it!

Wendy: You and Karin should start a recipe thread... but that would mean that we would lose the first peep at everything! I wish I could cook... I'm starting to copy and paste them to DH as he is the chef! the Banana Oatmeal is on the list! and you can honestly say that today you accomplished more by 6am than most people do all day! WOW, I am truly impressed!

JJ: you have given me another thing to aspire to today! clean!!! :eek: I need to make up for the last few weekends of... well... issues... So I am a bit behind. I'm on my way to start that soon!

Karin: I must have missed your post on how your presentation went! I bet it was right on! You put so much work into it, and I'm sure the tidbits you told us about it was only the tip of the iceberg!

Heather: Thanks for the link for your otter ipod container... I think we have the otter-type waterproof containers for our digital cameras as my DH was a fishing guide and we also took a fishing trip to the Florida Keys a few years ago, and didn't want to take a chance of ruining our digital cameras by getting them wet! they were lifesavers! I never thought about those for the Ipod!

Good morning! Today I rode my spinning bike for an hour. I just did a steady state spin because I watched some of the shows from the week while riding. I feel less guilty about watching stupid TV shows if I am spinning while doing it. Not sure what DH and I will end up doing today. I don’t really feel like doing anything actually.

I love it when I can make it to the store during off hours because it’s actually enjoyable without a million other people there too. Thanks for sharing the pumpkin bread recipe. I actually have some in the oven right now. I didn’t see your recipe before I made it or I would have tried yours. Next time! I’m glad that you love www.foodgawker.com. It’s so fun to look at. The salsa that I made is good but it kind of looks weird. The color is not red but kind of a browny, orange color. It’s really the story of my life. Most stuff that I make tastes pretty good but looks sketchy.

JJ – welcome back! I am impressed that you cleaned so much. I have barely even straightened up this weekend and it looks like it. Yes, I do believe that it was me that posted the Angel Hair pasta recipe awhile back. I’m glad that you and your family like it.

Heather – great job yesterday with painting and patching. That’s hard work. Enjoy your day of rest.

Karin--Muscle Max is just what the Dr. ordered today, I loved every challenging minute of it!! I had to lower the amount on some of my weights because I hadn't really done anything in over 2 weeks, so hoping to get the numbers higher again.

Heather...You mis-understood...I am a fan of THE EAGLES....Hotel California, Take it Easy..you know. In Philly there is only one team for me, the PHILLIES 2008 WS CHAMPS!!!...Actually, once Andy Reid is fired and Donovan McNabb is gone, the other Eagles will warrant my interest again!

Wendy---MM is a great total body workout that does indeed have premixes..all lower, all upper, time saver. I love it just as is!! Cathe uses the band for Tricep Kickbacks, Lat Raises, and Leg Presses

Ellie...YOU are awesome, IMAX 3!!!!! I'll bet you loved every grueling minute as well, it feels so good to relieve stress, doesn't it!!

Dani--MM, and all of Cathe's workouts have given me nothing but success, both physical and mental!!

DH's Homemade salsa

Karin/Wendy:

in light of the salsa "issue" I thought I'd offer my DH's version of his own latest salsa creation he made just the other night... Not sure if you like really HOT stuff, and on a scale from 1-10, 10 being firehouse hot, I would say it might be Medium, if you are a fire sort of gal! DH said if you don't like real hot you can leave out the Habinero. Recipe:

1 habanera pepper
1 jalapeno pepper
1 anaheim pepper
1/2 sweet onion
1/2 red bell pepper
** saute these veggies in EVOO until clear

ADD:
4 roma tomato diced into small pieces
1/4 c. cilantro (or to taste)
3 oz. tomato paste
16 oz. crushed pineapple (no need to drain)
1/2 c. cider vinegar
3/4 c. brown sugar
16 oz. tomato sauce
1 c. water
salt/pepper to taste

Simmer over low-med heat to desired consistancy, stirring as needed.

if you are looking for a more "hot sauce" consistancy, you can use the "boat motor" to crush into a smoother consistancy, but DH left it chunky and said it was pretty much the best he has ever made... It's on the docket for today as well...

Also, if you are looking for a milder version, you can leave out the Hab pepper...

it definately does NOT look like "poop" but rather pretty with green pieces! (that coming from a complete cooking novice!)

just thought I'd throw that out there! let us know if you have any questions or how you like it if you make it!

Dani - thanks for DH's salsa recipe. I will try it the next time that I make salsa and I would probably leave out the habanero the first time I do it so it isn't too hot. I think I know why mine looks like poop. I put it in the blender and blended it too much so it is purreed salsa right now in a lovely shade of brown :rolleyes:. That's a good idea by your DH to use an immersion blender and just mush up some of it. Love it! I am adding one onto my Christmas list.
 
Karin: we have a Braun immersion blender and LOVE it! we use it for all kinds of stuff. You, being a cooking guru, will absolutely LOVE this as an addition to your kitchen! We don't use it a lot, but they certainly do come in handy when you need it! Hope Santa is listening!

and DH added that if you cut up your stuff in small enough pieces before cooking, then you really don't need to use the blender unless you are looking for the more saucey consistancy... :) Please let us know how you like it if/when you do make it...

Karin--Would you think I was so amazing if I told you I rolled out of bed, brushed my teeth, shoved my hair into place and went out to Wal-Mart wearing a chipped and faded, 15 year old "Fighting Illini" sweatshirt and dirty jeans to the store? (Sweatshirt from my Purdue years, a souviner of a roadtrip I made with a friend to U of I.) I was looking fancy!! LOL! Now DH wants to go shopping at an outdoor mall today and I'm debating going...At least Houdini is entertained in her stroller and I don't have to chase after her if I stayed home...

Oh, the color of your salsa sounds OK--I know several restaruants down here that have it that way and it tastes delicious. Can't wait to try this one, too!

Heather--YES YES YES I can cure you of that butter-n-cheese veggie dish disease you have. The secret is a triple attack: 1. ROAST your veggies for intense flavor 2. ADD Olive Oil to season instead of butter and cheese 3. FRESH HERBS are a must!! Once you taste the pure flavor of vegetables this way, you'll love it! To ease into it, I'd try the sweeter squashes first (roasting butternut squash or acorn squash) and seasoning with pure maple syrup (yes, it's expensive but worth it!) Or you can roast the spaghetti squash like Ellie did and serve with marinara sauce. You won't know you are eating squash and the nutritional benefits are huge! Let me know if you want some squash recipes and I'll post them here for everyone.

DH is being kind and is entertaining Houdini in the backyard as I type. I'm about to start cup of coffee number three. Cowboys are on at 12 but we'll probably watch a bit then run some errands, unless Houdini takes an early nap. Oh! Heather, yes, I do like Tony Romo, the Jedi Warrior (HA!) I even like him with Jessica Simpson. Makes US Magazine that much more local and fun with Dallas' own power couple...HA!!
