I'd also put together a fruit salad, or a fruit platter with a dip of some kind. Maybe yogurt (flavored soy or dairy), not a whipped cream type thing.
I'd also think about adding some unusual veggies to the platter. Something yummy to add to the fresh veggie tray would be some very large glove artichoke leaves. You steam them, then peel the leaves off, and arrange artfully on the platter. These look great and one large globe produces quite a few leaves. You can also go for jicama, grilled baby sweet peppers, baby zucchini, and japanese eggplant. These can all be grilled ahead ot time, then marinated for a few hours in your favorite vinaigrette, and placed out with some whole grain crisp bread, the ww pitas, or sliced and toasted whole grain rolls.
