OT - Homemade fresh salsa

Now that the gardens are starting to produce some YUMMY items to make salsa, I was wondering if anybody had a good fresh salsa recipe I could try? My DH loves fresh salsa and I've only made the kind that I can. I'd like to try something fresh instead this summer.

Hi Marcia!

I make home-made salsa every summer. I don't measure anything though so I will try to explain...

For about 4 quarts I would use

6-8 tomatoes
enough jalapenos to get the right amount of spice (mild/med/hot)
Garlic salt
tablespoon of sugar (I use splenda)
1 6 oz can tomatoe paste
1/2 onion
green pepper (1 large one)
yellow banana peppers (3)
red pepper (dry flakes)
salt/pepper

I let it simmer for about 30 mins and then I can it all. I am still waiting for my tomatoes to get ripe, but I should be making some myself soon.

I love salsa!!

3 large tomatoes
I small can jalapenos (or peppers of your choice)
1 small can diced olives
5 green onions
2-3 clove of garlic
1 T lime juice
1/3 cup cilantro
salt and pepper to taste

I put all ingredients into a food processor and blend. The flavors really come alive if you refrigerate it for a few hours...:)
 
Ohhh I love salsa too!! Mine is very very hot and I love it!

1 can diced tomatoes
4 serano peppers
4 jalapenos
5 garlic cloves
1 medium onion
3 T tarragon vinegar
3 T lime juice
1 habanero pepper
salt
fresh cilantro


put in blender yummy!!

To all: What kind of tomatoes do you use? I'm waiting for my plum tomatoes to ripen to make my salsa since they are more meaty. Last time I tried using regular tomatoes my salsa came out too watery. If you are cooking the salsa, do you boil it down to make it less watery? I have lots of regular and grape tomatoes right now.

Ooh Lisa, just looking at your recipe makes my eyes water LOL. I hope you don't put your nose too close to the blender while you're making it! The first time I used habeneros in a recipe my hands burned for 3 days.

I use Del Monte canned diced tomatoes and they are very good in salsa-yes its hot but for me its perfect the habenero adds a yummy flavor!!

Hi Marcia,

Here's one I make that gets good reviews. I just use whatever happens to be coming out of the garden at the time, in whatever quantities are available. It's very fresh.

Just combine the following in a large bowl (all quantities are approximate because I don't measure anything :) )
Tomatoes (coarsely chopped):
2 quarts cherry, grape, pear, or other small tomato (I like to used several kinds) or 3-5 large sized tomatoes. I don't bother peeling or seeding.
1-2 cucumbers: peeled, seeded, and diced
1-2 zucchini and/or yellow squash: diced
1-2 sweet peppers: diced
1-3 fresh chilis: diced - play with the quantity on this to get the desired amount of heat.
3-5 Tbsp chopped cilantro
3-5 Tbsp lime juice
2-3 Tbsp apple cider vinegar
1 Tbsp ground cumin
salt & pepper to taste

You can also add other things like fresh sweet corn kernel, black beans, chick peas...whatever strikes your mood. It's a very versatile recipe.

ETA: Since this is a fresh, raw salsa, you'll want to eat it within a few days...not that that's a problem at my house

Here's another (I like the tomatillo)

Chop and mix:
1/4-1/2 onion
2 cloves garlic
cilantro (to taste)
basil leaf
2 roma tomatoes
juice from 1/2 a lime
salt
1/2 jalapeno pepper, seeded
1/8 sweet tomatillo:9
 
I usually chop my tomatoes first and then put them in a colander over a bowl to let them drain a little while I chop everything else up. It helps cut down the water a little.
 
All of these sound so yummy. I don't know if you guys have ever heard of Muir Glen fire roasted diced or crushed tomatoes (I found them on Rachel Ray) they are organic and they are soooo yummy. I think they would go great in a salsa rec listed above. I am going to try it out and let you guys know.

All Natural Salsa

Roast 3-4 ripe tomatoes on the grill
Roast a medium red onion
Roast 3 Jalapenos
Roast 3/4 garlic cloves
Chopped Fresh Cilantro

Peel the roasted tomatoes and chillis, shop the onion, the Jalapeno, and the garlic mix in a glass bowl, add a litle lime or lemom juice, salt and the chopped cilantro mix it up and refrigerate. Serve with grilled meats and seafood.

Salsa Pico de Gallo, all raw natural ingredients:

Chop 3 fresh tomatoes
Chop fresh Cilantro
Chop red Onion
Finely crushed fresh garlic
Finely chopped fresh jalapenos to taste

Mix it up in glass bowl, add salt, pepper, and lime or lemom juice, keep refigerated.
 
Thank you Marcia for making the request!!!...I too love fresh salsa...so I hope everyone keeps the recipes coming! I am hoping to try a few myself.

I've made salsa twice but it never did come out "quite" right (I think I like to taste the cilantro but I don't know how to make it "just right") so I am going to try some of your recipes.;-)

Please let me know which turn out to be some of your favorites. :D

My SIL made a salsa when we were at her house a couple weeks ago. It was just chopped tomatos, chopped onions, balsamic vinegar and a couple teaspoons melted bacon fat. It was yummy with whole wheat tortilla chips.
