OOPS! Artichokes not Brussell sprouts

MAYNARDSMOM

I goofed - it's artichokes that should be eaten to help lower cholesterol not brussell sprouts. ANy tips for those besides the ever fattening artichoke dip. Now I have fresh brussel sprouts I have to convince someone to eat

Give the sprouts a go! I hated them as a kid, but it turns out they were cooked to death. After 40 years of avoiding them, I friend served them for dinner and they were steamed just until tender. They were bright green instead of gray and were sweet and wonderful.

Artichokes are just vehicles for butter or mayonnaise.

Artichokes are fantastic! Especially freshly cut, spring artichokes that have suffered a wee bit of frost.

Like Cynthia, I like to grill them, but I steam them first, brush with garlic & evoo, then grill - this seems to speed things up. (it could be just me, but when I grill them without steaming - it seems to take forever)

I make a saffron aioli to go with it, much better than mayo or butter.

:D

Thanks!! :D:D Grilled artichokes sound yummy! Of course DH says to make the dip - he has absolutely no clue on healthy eating!

Have you made aioli?

Here is my lickety split fast recipe in the food processor -

1 large egg
2 tbsp lemon juice
3-5 cloves garlic, peeled
about 1/4 tsp salt
Herb or seasoning of choice*

1 cup extra virgin olive oil, or less...

* - I like to use either basil or saffron, if using saffron put a pinch in a small bowl with 1 tbsp of olive oil to soften it up and release the flavor.

In food processor or blender, combine first five ingredients....then slowly add olive oil in a very controlled drizzle while the blender/food processor is running....stop blender when all is incorporated and aoili has set up.
