Okra

That gelatanous slime is supposed to be very good for you...the same way the gums and pectins in beans and oatmeal are! deb
 
Unfortunately, the only way I like okra is fried, which is definitely not a good choice. I do remember, however, a lady at our church who cooked okra with onions and tomatoes (simmered all for about 45 minutes -- also added her seasonings). It was real good. I don't have a recipe (she is now deceased), but I actually could eat it and it wasn't too slimy. She cut up the okra and onions and I think (not sure) that she used either canned tomatoes (cut up) or real tomatoes chopped up. Anyhow -- hope that helps!
