Not-too-guilty treat for chocoholics!!

For Christmas this year, my stepmother sent me some treats that satisfied my cravings for both chocolate and crunchiness. :9 They're also fast and easy to make (I made a batch in about 10 minutes total). Just melt some chocolate chips in a glass bowl in the microwave (I used Giradelli dark chocolate chips, 1 minute at a time, stirring after each minute, it took three minutes). Then mix in a some grape nuts (or, cheapo me, the generic equivalent) until they are covered in the chocolate. Spoon onto wax paper and let harden. I like cocoanut, but I don't like the saturated fat in it, so I mixed some natural cocoanut flavoring in with the grape nuts before adding to the chocolate.

Sorry I don't have exact proportions. I used about a 2-to-1 ratio of chocolat to crunchies. At first, I thought I had added too much cereal because things weren't sticking together, but I just made some mounds on the wax paper, and when everything had hardened they stuck together.

I'm also contemplating a version of these using some finely chopped walnuts, along with some walnut flavoring to reduce the fat content (even though it's good fat) and bump up the flavor.

Oops! I meant to say "2-to-1 ratio of crunchies to chocolat" (though you could go the other way, too!)
 
I just thought of a variation: using orange flavoring in with the cereal. (Inspired by a Newman's Own Sweet Dark Chocolat bar with orange!)

I use "Pure orange extract," which I get from a natural foods store, but which is also available in some grocery stores. (I just picked up a fresh bottle today!)

This sounded so good. I decided to try it this evening - um, er, except I sorta tried to speed things up a bit. I dumped the grape nuts in a bowl, threw some chocolate chips on top and melted it in the microwave. The chocolate melted and the dry grape nuts blackened to a toasty crisp! The house is full of smoke. HA! LOL - I'm such a dork.

<Repeating to self "there are no short cuts - there are no short cuts. . .">

Oh my! Even if your technique had worked, you would have saved yourself a minute, at most!!!
 
Recipe with peanuts and raisins...

Here is a similar recipe - I've never made it, though.

1 cup chocolate chips
1/2 cup unsalted dry roasted peanuts
1/2 cup raisins

Microwave chocolate until almost melted.
Add peanuts and raisins - stir well
Drop mixture by teaspoonful on wax paper and refrigerate for about 15 minutes or until clusters harden
