Fat is the only food group that (as far as i'm aware) will not produce insulin. Protein does, but not very much. Carbohydrates produce insulin. They all turn to sugar once they enter the body, regardless of the sourse, but clearly some are better than others (whole foods, fruit, vegetables vs man made processed foods). If you balance your food intake, protein, fat and real carbohydrates, you should be able to control insulin levels much easier. I hope this helps x
