When you hit the Quick Reply icon and start typing your message, there's an option to "Go Advanced." That will give you
more options when posting, including the smilies.

They'll be in a group on the right, and you just click the one you want.
Eventually, you'll learn the keyboard shortcuts for various smilies, and then you can just type those in manually in the Quick Reply box instead of going to the "Advanced" box.
To quote only a portion of someone's post, just look between the two quote codes (
[ quote ] and [/ quote ] ) and delete whatever text you don't want. The part of the message that is left is what will show up in the quote.
If you're pulling out text from different spots in someone's post, just type out the quote codes (listed above in red only
without the added spaces...I added spaces so the quote codes would actually show up instead of quoting the word "and") and insert whatever text you'd like quoted. Basically, whatever is between the quote codes gets quoted. Like...
