Need new veggies

I normally eat a piece of fruit at work for 2nd breakfast, and for 2nd lunch I normally have a granola bar, a fiber one bar, or a nut bar. I gotta get away from the bars. I want to make 2nd lunch raw veggies. But a girl can only eat so much brocolli, cauliflower (burp!), baby carrots, and cherry tomatoes. What else am I missing that makes a good work snack? I want to be able to go without dip. I am not a big cucumber fan. I like snap peas, but they are best fresh from the garden, as are raw green beans. They don't taste the same from the store. Can summer squash and zucchini be eaten raw? I'm not a big fan of those, but I could learn, or at least give it a go. I think I might try sliced jicama as well. What are your favorites? What am I missing?

I buy a package of "stop light" peppers (red, yellow and green) and bring those to work. I eat them without dip and love them. Yellow is my favorite!
 
What Klaudia and Jane said! Peppers are great, and if you don want to slice them up, you can eat them whole, like an apple.

Another thing I like, but it technically isn't raw, is pickled beets. Just don't wear white on that day. ;)
 
Yep, peppers, for sure. I'm loving celery.... leaves my mouth feeling very clean, and cucumbers are always easy, too.
 
Another vote for multicolored bell peppers, with or without hummus for dipping... and I love pickled beets, too. Have you considered a small green salad with fruit, crumbled cheese, and/or nuts or seeds? That makes a nice snack. I make a salad dressing with orange juice, orange zest, white wine vinegar, and olive oil, and it is to die . for . !!

Yes you can eat zucchini and summer squash raw. Very tasty. I agree peppers are great. I also like snap peas (like you mention) and jicama. Jicama is delicious!

Lately I've been loving fennel. I don't know how much you could eat by itself - maybe some fennel and jicama.
 
Michele, that is one of my favorite salads! We have a version here called a Michigan/Traverse City salad: mixed greens, dried cherries (I use cranberries), blue cheese, and walnuts, almonds, or pecans. Sometimes I add chicken and use Newman's Own Light Raspberry Walnut or Cranberry Walnut vinaigrette-yum!!

That sounds heavenly! The last time I made this salad I used mixed baby greens, orange segments, dried cranberries (I love dried cherries, too!), toasted pecans, and the dressing I mentioned above. I might have it for lunch today with a grilled chicken breast! I don't bother to rehydrate the cranberries because I prefer the chewy texture of the dried fruit.
 
I love red and yellow peppers. How did I forget those? I normally use them on salad, but they're good plain, too. Need to hit the produce dept

Fresh anise or fennel (they're both the same thing). Tastes a little like licorice. Excellent when thinly sliced and drizzled with olive oil, fresh lemon juice, and some salt and pepper.

What I'm making for this week - Mexican coleslaw
Ingredients - cabbage, jicama, carrots - shredded/thinly sliced + spicy pepper (I'm using an Anaheim this week)
Dressing is a sweet/sour vinegar type. I use just a touch of olive oil + vinegar + lime juice + smidge of stevia (for sweetness - you can use whatever)

I love this because I love vinegar based foods. It's very low in calorie, crunchy and packed with veggies. Google it for details, but be aware I modified mine so it may look different.

I also love spicy jicama 'fries' and 'catsup'. The jicama is cut into french fry slices then thinly coated with olive oil and spices (cayenne pepper, smoked paprika, pinch of salt). The 'catsup' is a raw version made from tomatoes and sun-dried tomatoes mostly.
 
Can summer squash and zucchini be eaten raw?
Yes! You can slice them into discs and use them to dip in hummus.
You can also make "noodles"/"pasta" out of them by slicing them thin on a mandoline (for "lasagne" noodles), and optionally cutting those slices into thin "fettuchini")

I love red peppers!

Celery is high in good organic sodium, and is actually a negative calorie food (it takes more calories to digest than it contains: but don't count on that for a weight-loss program, as you'd have to eat a LOT of celery--which is very low calorie--to make much of a deficit in calories).
