wendy, what is jajek? and do you make your own stuffed grape leaves? my grandmother made them and they were so good, but totally unclean. sigh. have fun with yoga. you are rockin those workouts. i wish there was someplace to do kettlebells nearby. dh would totally shoot me if i got more fitness equipment.

angie, i hear ya on the little extras. i try to brush my teeth frequently to avoid that. your dinner sounds good. with the lentil dish, did you saute the chicken breasts whole or cut up? i cannot wait to make that tomorrow!

colleen, uggg, meetings. great job with the wos! are you running outside now or on a tm?

kate, do you brown your meatballs first or just put straight into the slow cooker? i'd love meatballs i could just throw in the cooker - so much easier.

robin, good sounding meals, and great core wo. i have been doing core 3 times a week, lots of planks and ball stuff. it is great.

Angie, Glad you're enjoying homemaking!:D It's my favorite job! If I could just stay home and never leave that would be a-ok w/ me. I love keeping things tidy (but the housecleaner is nice for the deep cleaning!;)), making meals, etc....I would be one happy mama!
I'll post the meatball recipe in a minute - I don't consider it CLEAN, but it pleases the fam and I watch my portions. It calls for cream - I leave it out and use a leaner beef than they call for.

Meatballs are simmering, the fam's white bread is baking, and I made some ww oatmeal muffins for me. Better get movin' on my chores!
 
Slow-Cooker Meatballs and Marinara
Serves 6

Microwave the meatballs on a large plate or in a casserole dish to contain the rendering fat. You will need two 4.5-ounce tubes or one 6-ounce can of tomato paste. This recipe makes enough sauce to coat 1 1/2 pounds of pasta. Use a garlic press to mince the 8 cloves quickly.

2 tablespoons olive oil
2 onions, chopped fine
2/3 cup tomato paste
8 cloves minced garlic
1 tablespoon dried oregano
1/2 teaspoon red pepper flakes
Salt
1/2 cup red wine
2 (28-ounce) cans crushed tomatoes
1 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 pound Italian sausage , casings removed
2 large eggs
1 1/4 pounds 85 percent lean ground beef
3 tablespoons heavy cream
2 tablespoons finely chopped fresh basil
1. COOK AROMATICS Heat oil in Dutch oven over medium-high heat until shimmering. Add onions, tomato paste, 6 garlic cloves, oregano, pepper flakes, and ¼ teaspoon salt and cook until golden, about 8 minutes.

2. MAKE SAUCE Transfer half of onion mixture to large bowl; set aside. Add wine to pot with remaining onion mixture and cook until slightly thickened, about 2 minutes. Stir in tomatoes, then transfer to slow cooker.

3. FORM MEATBALLS Add ½ cup Parmesan, mozzarella, sausage, eggs, ¾ teaspoon salt, and remaining garlic to bowl with reserved onion mixture. Mash with potato masher until smooth. Add beef and cream to bowl and knead with hands until well combined. Form mixture into twelve 2-inch meatballs.

4. COOK MEATBALLS Microwave meatballs on large plate until fat renders and meatballs are firm, 4 to 7 minutes. Nestle meatballs in slow cooker, discarding rendered fat. Cover and cook on low until meatballs are tender and sauce is slightly thickened, 4 to 5 hours. Skim fat. Stir in basil and remaining Parmesan. Season with salt. Serve over pasta.

MAKE AHEAD Raw meatballs and sauce can be refrigerated separately up to 24 hours in advance. When ready to cook, add sauce to slow cooker and microwave meatballs before adding them to the slow cooker. Continue with recipe as directed.

Slow-Cooker White Chicken Chili
Serves 6 to 8

Four bone-in, skin-on split chicken breasts will work in place of the thighs.

3 (16-ounce) cans cannellini beans , drained and rinsed
1 (16 ounce) can white hominy , drained and rinsed
3 cups low-sodium chicken broth
Salt and pepper
6 bone-in, skin-on chicken thighs (about 3 pounds, see note), fat trimmed
1 tablespoon vegetable oil
2 onions, chopped fine
4 jalapeño chiles , seeded and chopped fine
6 cloves minced garlic
1 1/2 tablespoons ground cumin
2 teaspoons ground coriander
1/4 cup finely chopped fresh cilantro leaves
2 tablespoons drained jarred pickled jalapeños , minced
1. BLEND BASE Puree 1 can beans, hominy, broth, and ¾ teaspoon salt in blender until completely smooth. Pour into slow cooker.

2. BROWN CHICKEN Pat chicken dry with paper towels and season with salt and pepper. Heat oil in large skillet over medium-high heat until just smoking. Cook thighs, skin-side down, until skin is well browned and fat has rendered, about 5 minutes. Remove and discard skin, then add thighs to slow cooker.

3. COOK AROMATICS Pour off all but 2 tablespoons fat from skillet. Cook onions, chiles, and ½ teaspoon salt until golden brown, stirring occasionally, about 8 minutes. Add garlic, cumin, and coriander and cook until fragrant, about 30 seconds. Transfer half of onion mixture to slow cooker; reserve remaining mixture in refrigerator.

4. FINISH CHILI Add remaining beans to slow cooker. Cover and cook on low until chicken is tender, about 4 hours. Transfer chicken to bowl. When cool enough to handle, discard bones and shred chicken into bite-sized pieces. Stir cilantro, pickled jalapeños, shredded chicken, and reserved onion mixture into slow cooker and let warm. Serve.
 
oh kate,i want to make those muffins so bad. i have a ton of overripe banannas in my freezer waiting. sighhhh. i have such poor pc with low fat low sugar baked goods. i'd be better off making bad stuff so i would not eat it:p

i did the plyo circuit wo. it was fun! i finished and felt sao much better for doing that than snacking:cool: i am not sure how wise it is to do on top of long runsthough - will have to rethink this:confused:. anyways, it did give me a great endorphin rush so i can enjoy the afternoon more. i have leftover pork tenderloin to add to pasta and a peanut sauce. i will put mine either over spinach or spaghetti squash.
