I am so exhausted from my workout today...and then the 3 hours of pulling weeds and dead-heading my plants in this heat... I feel like ordering pizza or something rather than cooking tonight... But that will just de-rail the progress I made today. Hopefully I can come up with an easy solution for dinner so I don't blow it. What are you all having for dinner?
 
OOh my DH is cooking! Scallops and mashed potatoes in a port wine sauce, served with spinach. We haven't had dinner together in weeks, so I think he's trying to make up for that with this Fanciful Feast.

(Can you get a veggie pizza with half the cheese and twice the sauce or something?)

I can't think of many easy solutions for dinner, beyond the flavored chicken breast, baked potato, and asparagus that I would have had if DH had to work again.

I've not been so good today. I ate some Doritos which makes me feel yucky.

So it's going to be a light dinner of salad with olive oil and orange muscat champage vinegar (from Trader Joe's). I'll cook some of those frozen chicken tenders from Costco to put on top.

For me this is about as easy as it gets besides ordering pizza or any other take out.
 
We just had some baked Tilapia Fish with lemon pepper. I baked it in a oven bag. Green beans for the side. I was busy too and had a wheelbarrow full of corn that I froze, but was easy to stick the frozen fish in a oven bag, etc. Turned out really good too, and I am not a fish lover!

I had shrimp, broccoli and a sweet potato.

FIGHT THE URGE!! Just think how happy you'll be when you do!!
 
I shouldn't have posted. DH got stuck at work again. He's not coming or cooking.

If this didn't happen at least 5 times a week, it wouldn't be so hard!

I hope you figured out a good dinner for yourself!
 
Thanks ladies for the suggestions...and support.

DH and I decided on some scallops, pan seared with some Paul Prudhommes seafood magic along with some angel hair pasta with sun dried tomatoes, basil, shallots, garlic and white wine...and a salad of mixed greens, feta cheese (just a bit) and a summer tomato and onion dressing. Relatively easy, SUPER good and low fat/low cal to the best of my knowledge. DH cooked it for me :) He's the best. Can you tell that he's sitting next to me??? Gotta love him though... He is the best.
