OK, I have to share this decadent little discovery with you. It's a fun way of making chocolate cake in a mug using the microwave. I'll admit that it's not exactly the real deal, but hey it's close enough and it's kind of neat. Kids would just love to make it!
I just made this after shoveling snow for an hour and a half, so that's how I justify it!
But honestly, it makes enough for two and now I have a belly ache!
I used the recipe from this blog, but there are many variations out there if you google it. I bet it would be yummy if you added some instant coffee. Anyway, here's the recipe I used:

I made a lot of changes and it came out great: I veganized it by using egg replacer and rice milk, I cut the sugar by 1 tbsp and added about 1 tsp of agave nectar, I added a pinch of salt and a pinch of baking powder, I replaced 2 tbsp of the oil with apple sauce, I added a few drops of vanilla extract and a small handful of vegan chocolate chips, and finally, I used 1/2 AP flour and 1/2 whole wheat pastry flour.
