Memorial Day recipes??

Hi everybody:

I am going to a Memorial Day BBQ on Monday and am wonder if anybody has a good recipe for me to make and bring. Of course, one that is good for you. :9

P.S. I'm also on Weight Watchers so if anybody knows the Points that's even better. Thanks in advance. :)

Marci: You can try this one that I like as a side dish. Mix 2 cups of shredded carrots with 1/3 cup of mayonnaise (non-fat works fine), 1/3 cup of raisins, and a 20 oz. can of crushed pineapple, juice and all. Let it chill for a while or even overnight for the flavors to mingle. Hope you like it. Great way to get those fruit and veggie servings! Have a great Memorial Day weekend. It looks like it's going to be a weather wash-out here in New Jersey!
 
This will be the hit of your outing:

Southern Pecan Praline Cake

1 box Duncan Hines Butter Pecan cake mix
1 can coconut pecan frosting mix (the kind you put on German chocolate cake)
4 eggs
3/4 c veg. oil
1 c water
1 cup chopped pecans, divided

Preheat oven to 350 degrees, and spray a Bundt cake pan with veg spray like "Pam." Sprinkle 1/2 of the pecans in the buttom of pan. Mix all other ingredients until combined, and pour into cake pan. Bake 50 minutes, or until inserted tooth pick comes out clean.

Here goes two for ya! Knorr's spinach dip is incredible. It's best served with carrots,cucumber,celery(vegetable tray) and pumpernickel bread. You can use lowfat substitutes.

Knorrs Spinach dip
Prep Time: 10 Minutes
Chill Time: 2 hours
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
1 container (16 oz) sour cream
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 package (1.4 oz) Knorr® Recipe Classics Vegetable Soup, Dip and Recipe Mix
1 can (8 oz) water chestnuts, drained and chopped (optional)
3 green onions, chopped

  1. In medium bowl, combine spinach, sour cream, mayonnaise, recipe mix, water chestnuts and green onions.  
     2. Cover and chill 2 hours to blend flavors.  
     3. Stir before serving.

Now for the sweet tooth. Oatmeal Scotchies (recipe is on back of nestle butterscotch morsels) I add raisins to mine and also put in protein powder(vanilla cream) for a healthy treat :)

  Makes about 4 dozen cookies
Prep Time: 10 minutes
Ready In Time: 10 minutes

* 1 1/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1 cup (2 sticks) butter or margarine, softened
* 3/4 cup granulated sugar
* 3/4 cup packed brown sugar
* 2 large eggs
* 1 teaspoon vanilla extract or grated peel of 1 orange
* 3 cups quick or old-fashioned oats
* 1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

PREHEAT oven to 375° F.

COMBINE flour, baking soda, cinnamon and salt in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crispy cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION:
Grease 15 x 10-inch jelly-roll pan. Spread dough into prepared pan. Bake for 18 to 22 minutes or until light brown. Cool completely in pan on wire rack. Makes 4 dozen bars.
