What are they and where can I find them?? I am fairly new to cooking and have been able to make my way around the market on my own for the most part, but now I'm stumped...lol Thanks!

I've never heard of maple sugar FLAKES, but maybe that's just a term this particular author uses for maple sugar, which is the dried maple syrup. It's in granules. (ETA: I did a quick web search, and it does look like maple sugar flakes is just another term for maple sugar).

Amazon carries several brands, like this one: http://www.amazon.com/Shady-Maple-Certified-Organic-8-8-Ounce/dp/B001ELL3YQ

It is absolutely delicious!
When I was in Québec a few years ago, I got some in a grinder (in a gift pack from a tour company I took a trip with) and it didn't last long.;)
