Low fat cookbook suggestions

I really enjoy cooking and hate to admit that my diet isn't very good. So I am going to make a strong effort to stay away from the center aisles at the grocery store (hamburger helper & hagen daaz ice cream). I am thinking of ordering:

Betty Crocker's Low-Fat, Low-Cholesterol Cooking Today
Betty Crocker's Healthy New Choices : A Fresh Approach to Eating Well
New Dieter's Cookbook: Eat Well, Feel Great, Lose Weight Better Homes & Gardens

I am hoping for "comfort food" recipes but healthy and semi-easy to make (doesn't take 1/2 hour of preparation). Any thoughts on these books or other books you like? I'm more interested in non-vegetarian cookbooks too.

I've lost 90 pounds eating lowfat (WW online) and I swear by any of the Cooking Light Cookbooks. If you were only going to get one, I'd get The Complete Cooking Light Cookbook. It has everything in it from wonderful salads to great main dishes (meatloaf!) and desserts.

I use this one a great deal, and the French vinegar Chicken with polenta is one of my comfort food musts in the fall and winter, as is the shepherd's pie.

I also like WW's Take out Tonight, but it isn't a basic cookbook. It gives lower fat versions of ethnic foods you'd get as take out, eg. Indian, Chinese, Mexican, Greek, etc. I use the chinese section often.

I bought Dr. Dean Ornish's Everyday Cooking with Dr. Dean Ornish: 150 Easy, Low-Fat, High-Flavor Recipes and like the book very much. It is a vegetarian cookbook. My favorite recipe is for blueberry muffins that taste way more like a nice treat than wheaty health food muffins.

Blueberry Muffins

Ingredients:
1 cup whole wheat flour
1 cup all purpose flour
3 tbsp sugar
1 tbsp baking powder
½ tsp salt
2 egg whites or ¼ cup liquid egg substitute
1 cup skim milk
¼ cup unsweetened applesauce
1 tsp vanilla extract
¾ cup frozen blueberries

Directions:
1.Preheat oven to 375
2.Spray muffin pan with nonstick spray
3.Combine dry ingredients in a bowl (whole wheat flour, all purpose flour, sugar, baking powder, salt) and stir to blend
4.Combine wet ingredients in separate bowl (egg whites, skim milk, unsweetened applesauce, vanilla) and whisk until smooth
5.Add dry mix to wet mix and stir with a fork until batter is blended; do not overmix
6.Stir in the blueberries
7.Bake for 10-15 minutes

Makes 12 muffins

Fat: 0.3 grams
Carbs: 21.5 grams
Protein: 3.7 grams

Fiber: 1.5 grams

One that I really like is low carb meals in minutes by Linda Gassenheimer. It is low carb as it does use some whole wheat pasta and tortillas and small amounts of yogurt and fruit. It also keeps the fat grams down. I followed the plan here for quite awhile and felt really good and leaned out a lot.

Would you say the recipes in this book are simple or complicated (i.e. lots of ingredients, some hard to find)? I love Dr. Ornish and hadn't seen this cookbook, so I'm interested...
 
I love Looney Spoons and Crazy Plates - I think they are Canadian and I don't know if they are widely available - but you can get them at Amazon.com They are great meals, easy to prepare and low fat!

Cooking Lite puts out a compilation cookbook every year of recipes from the magazine. They have a wide variety of recipes, including "comfort food" and quick and easy. Nutritonal information is included about each recipe.

I have the 2001 and 2002 cookbooks and use them all the time.
 
Reiman Publications has a cooking magazine called"Light and Tasty" that they publish every other month. It has tons of good recipes with the calorie,etc.. break down. You can visit their web site for a preview.

The editors of Shape Magazine have created a low-fat cookbook. It's called Shape lowfat and easy. It's a compilation of all the recipies they've had in the magazine from the past 5 years. I think the recipes are pretty straightforward, and the ingredients aren't too exotic. I don't cook much and am a plain eater, so I don't use the book. If you'd like to borrow it, I'd be happy to send it to you.
