Kale

Okay, I know that kale is incredibly good for you. I can't manage to choke it down. My next experiment will be to try making kale chips. I'm hoping that will help me through the afternoon munchies.

Any good recipes or ideas out there?

I think Kathryn has a recipe for Kale chips in her blog, looked a little involved for me at the time, have to take another look...

my next project, Tam's Morning Constitutional Muffins from the Eat Clean Diet Recharged cookbook.....:).....I'll need some ingredients for that one

& maybe the Asian Noodle Bowls....yum!

The one and only time I ever tried Kale was when I simmered it in some veggie broth until it was tender. It was so bitter. My sister and I both spit it out as soon as it was in our mouths.

I would love to know how to cook this and be able to eat it since I know it is incredibly nutritious.
 
Yes, I have a recipe for kale chips in my blog (easy to make, IMO it just may look 'too involved' in print. You can also be less anal retentive about the shape and just tear the kale into the right size pieces). These have been a hit for me with many people, who can't believe they are kale.

You can also throw a handful in a smoothie (a basic recipe: 1 frozen banana, 1-2 peeled oranges, and a handful of kale. Start with a 'small' handful, and add as your tastes adapt. If you don't have a high-powered blender, chop the banana into small pieces, use orange juice--fresh squeezed--and blend the kale with the juice first).

I have a lot of green smoothie recipes in one of the posts on my blog, and several of them include kale.

You can also thinly slice kale (remove the center stem, roll the leaves, and slice thin in to a chiffonade cut) then add some lemon juice, a bit of oil and a touch of salt, then massage this into the kale until it softens.
 
I tried kale chips and they were pretty good. I just throw a few handfuls of it in my salad and mix it up with the lettuce and spinach. I kind of like its tougher texture.

A recipe from Aarti on food network. My BF who does not like Kale really liked this salad. I am sure you could use any fruit. It was so light and refreshing. I massaged the kale probably longer than the recipe called for.




Ingredients:
1 bunch kale (black kale is especially good), stalks removed and discarded, leaves thinly sliced
1 lemon, juiced
1/4 cup extra-virgin olive oil, plus extra for drizzling
Kosher salt
2 teaspoons honey ( I had to use a bit more)
Freshly ground black pepper
1 mango, diced small (about 1 cup) ( I used Cantalope)
Small handful toasted pepitas (pumpkin seeds), about 2 rounded tablespoons

Directions:
In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.


In a small bowl, whisk remaining lemon juice with the honey and lots of freshly ground black pepper. Stream in the 1/4 cup of oil while whisking until a dressing forms, and you like how it tastes.


Pour the dressing over the kale, and add the mango and pepitas. Toss and serve.
 
I really like kale in soups, but I just made kale chips (kale with olive oil and salt baked until crispy) and something about the intense/concentrated smell made me gag. Strange. I had to throw them away. I was so looking forward to this after all the rave reviews I read. :(

Yes! That's what makes it hard for me to eat. I have the same problem with hard boiled eggs.

Thanks to everyone for all the great ideas. Surely with all these fabulous suggestions I can stomach something. But I do like swiss chard better, so thanks for that idea.

The kale chips I'm familiar with are dehydrated, not baked. And there is no strong smell to them.
 
Swiss chard! Equally good for you, and bloody delicious!
I have to disagree that Swiss chard is equally good for you, as it contains high amounts of oxalic acid, which can interfer with absorption of some vitamins and minerals. Kale is very low in oxalic acid.
 
I love kale and mostly just put a little olive oil, garlic and saute the kale until it is wilted. I also like to add some raisins and pine nuts. Sometimes I will saute sweet potatoes and then add kale for a few minutes towards the end of cooking. Make sure you cut the leave off the center stalk. Great in soups. I really like all greens including chards, escarole, spinach etc. Guess it is from growing up in an Italian household where these were served regularly. Loved greens even as a kid.
 
I like to chop up or will even buy frozen chopped kale at Grocery Store and throw some into homemade chili or an egg scramble. No bitter effect :)
 
I agree with Phyllis... you can saute a little onion in olive oil, then add thinly sliced kale. raisins and pine nuts are a great addition but not too many. I like it in soups too. I don't find it bitter at all but DH thinks it can be. I've mixed chopped steamed kale into potatoes. I don't like it raw and I'm not a fan of kale chips. mostly I prepare it like any "green" like collards, or chard, Try it at various stages of cooking to get a texture you like. I prefer some texture to greens and don't like them cooked to mushiness.
 
I had never eaten Kale before and got this recipe from a friend and it was TO DIE FOR. I love it!:

Ingredients

Olive Oil, 1 1tsp
Kale, 0.75 cup, chopped
Onions, raw, 0.20 cup, chopped
Swanson Chicken Broth 99% Fat Free, 0.25 cup
Hormel (Kirkland) Precooked Bacon, 1 slice



Directions
Saute onion and bacon in olive oil. Add kale and broth, boil, cover until wilted. Add s&p, red pepper, red wine vinegar as desired.

Number of Servings: 1
