In search of a "crunchy lunchy"

Hi Everyone! I had an awesome lower body blast class this morning and now in search of a "crunchy lunchy" before my meeting. I hear a big dark green leafy salad with walnuts, apples and non-fat cottage cheese calling my name. What are you having for lunch?
 
That sounds yummy! I am putting that on my Mealplan :p. I am having salmon, lettuce, carrots and various other goodies to make a nice salad.

Just wanted to tell you that I really love your Mealplan program. It makes it so darned easy to eat healthy and with the grades, it makes it easy to figure out why I am flunking and how to fix it! Great program.
 
That sounds yummy (minus the cottage cheese for me). I might steal that idea and have a dark-green salad with home-grown sprouts (I just harvested a batch of clover/alfalfa/broccoli), raw walnuts, chopped apple (red apple with peel, for color), and a sprinkle of hemp seeds for good measure.
 
I am having lasagna made with eggplant as the noodles. For the crunchy part, I am also having some raw baby carrots!

Is it wrong to be so excited to eat?!

How clever! Sounds like a fun name for the salad section of a lunch menu!
 
So fun to hear back from you. Love your food choices ....gives me ideas to change mine up sometimes too.

It's not wrong to love to eat when its clean. "Dense in nutrition" calories go a long way in supporting your workout energy and recovery.
 
I am having a much CRAVED salad made with red/green romaine lettuce, albacore tuna, grapes and safflower mayo used as dressing :)
 
I had a mini pizza for lunch. Now, before you ban me from the forum, let me explain. :p I took a whole wheat english muffin (cut in half) and topped each half with 4-5 cherry tomatoes (cut in half), a sprinkle of part-skim mozzarella cheese, and a dash of basil. I toasted the concoction in the toaster oven for approximately 5 minutes. I added my "crunch" with a handful of baby carrots and steamed cauliflower, and a half cup of grapes - all on the side of course. Delish!
 
I'll be the first to admit that I don't eat like that. I eat what I want but in moderation of course. There are foods that I would definitely stay away from but for the most part I don't deprive myself of anything. If I want something sweet then I'll have it but my cravings are for a short time.

For example, it could take me a week to eat 1 piece of cheesecake and I love cheesecake :)
 
I had leftover pasta with tomatoes & feta that I made for dinner the other night, an orange, some baby carrots and a chocolate chip cookie. Believe it or not, the cookie was the least tasty part of the lunch. Someone in my department brought in their Christmas cookies, so it was a little hard. At least I got some "crunchy" in my lunch too.
