I need quick/easy breakfast ideas

JennieR

Cathlete
For awhile now I've been eating half a banana with PB on 12 grain bread. I'm looking to add more protein in my diet. Can you ladies/gents share with me some of what you eat in the morning?

RE: I need a quick/easy breakfast

Jennie:

I love smoothies in the morning! One of my favorites is yogurt, rice milk, banana, dandelion powder (gives it a coffee flavor) and a blob of peanut butter. Also do the same basic with yogurt but throw in fruit instead.

Also, if you have a crock pot, you can put steel cut oats on the night before and cook them slowly all night, so they are ready when you get up.

HTH!

Sparrow, do these smoothies keep you full for awhile? I eat breakfast at 4:30 a.m. and by 6ish I'm hungry again.

They do if I bulk up the banana, or add something like wheat germ. But it also does depend on how intense a workout I do before or after.:)

RE: I need a quick/easy breakfast

I got this idea from Body for Life's cookbook/
4 ounce yogurt of choice
1/4 to 1/3 cup cottage cheese

mix the two together and top with a little granola and flax seed. It really stays with you a long time. The cottage cheese is high in protein. I like Dannon Activia peach in this combo.

High protein/low carb tortilla rolled with PB heated in the microwave for a few seconds. These are good for on the go and for a snack mid-morning.

For myself I have been making protein shakes

Raspberry Shake
3 TBSP (Jay Robb) Vanilla Protein powder
1/8 l low fat milk
75 ml unsweetened grape juice
100 g fresh or frozen raspberries (I add icecubes if using fresh berries)
2 leaves basil
3 - 4 leaves of mint

Indian Orange Shake
3 TBSP Vanilla Protein powder
100 g soy yogurt
juice of 2 blood oranges + a little bit of water (or 1 cup of regular orange juice)
2 tsp maple syrup
a pinch each of ground cardamom, cinnamon and white pepper

Kiwi Grapefruit Shake
3 TBSP Protein Powder
1 kiwi
150 ml grapefruit juice (or juice of 2 fresh grapefruits)
2-3 leaves mint
2 tsp lemon juice
2 tsp maple syrup
a little water

My kids or I love oatmeal (I precook the steel cut oats or buy it frozen at Trader Joe's) add some ground flax seeds, bee pollen, wheat germ and fruit (i.e. blueberries, strawberries, raspberries, pomegranate ....) and Fage Greek Yogurt (I don't like milk with oatmeal), to boost protein content I add 1 or 2 TBSP of protein powder.

or Kashi Cinnamon Harvest with any fruit that I have on hand and milk

or cottage cheese with any kind of fruit

or cottage cheese with cherry tomatoes, green onions, some herb salt/pepper and a slice of whole wheat toast or multigrain bread

Hope this helps!

1) Protein pancake

4 egg whites
1/2 cup oatmeal
little baking powder
little vanilla

fry in a skillet like a pancake - top with mixed berries and bananas

2) Go Lean Crunch with Almond Milk (YUMMY!!!!!!!!!!!)

3) 3 egg whites
1 scoop vanilla protein powder

fry in a skillet like a crepe, top it with almond butter and fruit (or peanut butter and fruit spread) it's like a peanut butter and fruit crepe.

4) 4 egg whites, spinach, little onion make an omelette and wrap it in a flat bread wrap

5) Strawberries, banana, protein powder, greek yogurt, ice fruit smoothie - sometimes I'll put flax seed in it to bulk it up a bit

Breakfast is my favorite meal of the day. . . . I could go on and on and on :)

I am so lazy when it comes to nutrition and eating breakfast in particular. I have a banana and a yoghurt, then a large latte mid morning with whole milk. There's protein in the yoghurt and milk. I'm done. Seems to work!

Clare

Thanks for all the great ideas ladies.

Clare, I'm lazy too when it comes to breakfast, but I need something different.

I make Breakfast Casserole on Sunday nights. It makes 6 servings that I eat throughout the week. It is also very filling.

BREAKFAST CASSEROLE
5 slices of lean ham, chopped
1/4 cup chopped green onions, or to taste
3 cups frozen shredded hashbrowns
1 1/2 cups fat free cottage cheese
1 3/4 cups reduced fat shredded cheddar cheese
2 cups of egg substitute

Mix all ingredients in a bowl. Spray a 9x11 pan with Pam and pour ingredients into the pan. Bake at 375 degrees for 1 hour.

My new fave breakfast cereal is Kashi Vive, Toasted Graham and Vanilla. It has 12g of fiber and 4g of protein. Not high in protein, but it does keep you full. You could always add a yogurt or cottage cheese for an extra protein boost.

My typical breakfast is veggie sausage and cottage cheese or veggie sausage and egg whites with hot sauce.

I have the mini egg white quiche cups. I make them on sunday and individually wrap them. They freeze well. I have one or two in the morning with one slice of multigrain waffle or bread and banana and I'm good to go.

1 8 oz carton of egg white or egg substitute
1 box frozen spinach thawed(squeeze well to get all liquid out)
1/2 chopped onion
1/2 chopped green pepper (optional)
3 drops hot sauce (optional)
1/2 cup reduced fat shreded cheese (I use mexican blend)
little salt & pepper to taste

Mix all. Line muffin tin with foil muffin cups. Spray with Pam. fill cups; bake 350 oven for about 25 minutes or until cooked through.

Chopped broccoli or small can of chopped mushrooms works well in this recipe.

I keep those snack packages of string cheese or cheddar cheese on hand, as well as some hard boiled eggs.

I have one of those with my PBB.
