I am obsessed with buffalo!

I've had it before but not recently. Well, last week my local gourmet market had it as a special. Just burgers, but OMG that stuff is so incredibly tasty!

Then I research the nutritional information & I can't believe how low cal/low fat it is. Now I'm considering moving to Montana so I can eat this crap every day. :p

Laura,

I've only tried buffalo one time at a restaurant a few years ago and loved it. I should check out my local markets to see if it's sold around here. Are you just using it for burgers or are you trying it in recipes calling for ground beef?

Hi , I buy mine in bulk from a bison farm up the road. We use it instead of beef. I love it. You get so much more for your money because there is no fat. Another bison lover.:D

Chastity, what my grocer had was pre-made burgers. I just ordered some steaks & ground beef online, not sure what I'll do w/them when they arrive but I'm sure I'll think of something. :)

kaykay, I am so jealous! Unfortunately NJ is not a place where the buffalo roam.

I'm not a huge meat eater but I bet it would taste yummy on the grill.
My DH will be happy this weekend when I tell him I want to buy red meat ;)
We eat a lot of chicken here.

Sounds good, I'll have to give it a try. We have a few farms around here in Minnesota. I should be able to locate some pretty quick.

OMG I wrote that I ordered ground beef. I think that's wrong LOL. I ordered ground bison.

LaDonna, I can't really describe the taste. I can't say it tastes like chicken. ;) It's not gamy like venison. Of course everyone's tastes are different, but I liked it much more than ground beef. And it's only 125 cals/2 gs fat/zero carbs per serving!

Hey, why is it that my posts about food generate far more interest than my posts about exercise? :D

Ah, Laura, I thought maybe you were collecting buffalo statues or something. But you eat the stuff. :p

A guy at work brought me a steak awhile back and asked me what I thought. Honestly, it was good but it reminded me of what plain old steak tasted like when I was a kid, before they started factory farming all the flavor out of the meat (causing all kinds of needless animal suffering) and pumping the animals with steroids. After they started contaminating beef I stopped eating it because it had no flavor and became a chore to eat. I would integrate bison into my diet if it weren't so expensive. But what you wrote cracked me up!

Wow, kaykay, you're lucky. You get it uber fresh then. I live near a restaurant that specializes in game. I love trying all the different beef alternatives. Rabbit, venison, the stuff is hard to cook though. It is easy to over cook. I'd love to hear some reciepes if anyone has them.

Hi guys,

I just use ground for anything I would use hamburger in. It makes great burgers. The key, I have learned is to cook it at a high temp. on both sides quickly, then turn it to low and finish until tender. I found the roast to take forever to cook but if I had the patience I am sure it would have turned out tender. I didn't like the hot dogs. I guess that's why I stick with ground bison. Sorry no good recipies but I think you get more meat because there is so little grease. I have to actually add water when I am cooking it and still nothing to drain.:)

Laura, hope you enjoy all your bison.
