This is totally my opinion here, but I think hypertrophy can be achieved with total body workouts. As I'm sure you know, total body does help overall fat loss, but you seem to be in pretty great shape, so a split routine may be the way to really hone in on the areas you want to change. I also believe it depends more on the rep range and using weight that challenges. I think the total body can have the effect of wearing out the larger muscles first so the smaller muscles (bi's/tri's) get more of the work load by the end. The best way would be to test the theory for a few weeks and if you don't see results then switch it up.
Just in case you are interested, I started following a rotation using STS 1,2, and 3 but basing it around my monthly cycle. I notice that ttotm week is horrible for any kind of strength gains, so I work around it. I did the following and feel pretty good (I have had some major doms for 3 weeks
Wk 1-Meso 1 as a total body workout (3 rounds from CSB, 3 rounds from BT, and 1 triset legs from Meso 2)
Wk2-Meso 3 as is_I will switch between squat rack and plyo depending on my mood
Wk3-Meso 2 as one body part per day and subbing Meso 1 legs instead of the trisets
Wk4-circuits (using kettlebells, trx, or Cathe's circuit DVD's)
