How do you freeze tofu?

I've heard that you can. I hope you can, because I just bought more than I can use quickly! I have the extra firm, packed in water. When you freeze it, do you leave it packed in water, or do you drain the water off?
 
Drain the water off. Another way is to crumble it first (out of the water) and freeze it that way. It gives the tofu a chewier texture, and you can use it just like ground meat.
 
You don't actually have to drain the water off b/c the last time I had to freeze tofu I didn't have time so I just stuck it in the freezer, it froze into a solid block, and then when I wanted it again I just pulled it out of the freezer and let it defrost in the fridge. Again, it comes out chewiers, more porous, but works pretty much the same way. I actually like it better after it has been frozen LOL =-)
