I was hoping for a couple of mincemeat recipes. If you find the time could you either post them or send them to me? Thank you, very, very, very, very, very, very, very, very, MUCH!

I figured with Pumkin Pie, I might go with a Butternut Suash bread...havn't tried this recipe yet, but it looked like perhaps something I could try again since we all love butternut around here.

However, my son and I are trying a Pumkin Flan with pumkin seed pralene on top! Flan is something the kids like for breakfast and with the addition of the pumpkin...well, comon! I saw the recipe off the cooking channel last night and went to www.foodtv.com and there it was. KEWL!

So,....I guess, we wait together eh? I really should get my face off this computer, my mind off of food, and my body into IMAX.

Ahhhh, procrastination.

I'd like to see these recipes too. Mince pies are coming back on the horizon after 11 years living in the States without one! yay!!!

But doesn't mincemeat have animal suet in it? Any possibility of making it vegtarian?!?!?!?!?!?!?!?!

My Mincemeat recipes

Pumpkin Mincemeat Cake

1 package Pumpkin Quick Bread
1/2 c. water
3 tbl veg oil
2 eggs
1-1/3 c mincemeat
1/2 c chopped walnuts
1 can Cream Cheese frosting, divided

Preheat oven to 375 degrees F. Grease 9 inch square pan or spray with non-stick cooking spray. Combine quick bread mix, water, oil, eggs, mincemeat and walnuts in a large blow. Stir until mix is moistened. Pour batter into pan. Drop 8 tbl. of frosting onto batter. Swirl frosting into batter with a knife. Bake for 35 minutes or until toothpick inserted in center comes out clean. Cool. Spread remaining frosting on cooled cake.

Cookie Crust Mincemeat Bars

1 pkg sugar cookie dough
1-1/3 c prepared mincemeat
1 c chopped walnuts, divided

Preheat oven to 350 degrees F. Slice chilled cookie dough into 1/4 inch slices. Place 2/3 of the slices onto the bottom of an ungreased 8 inch pan, then with floured fingers, press dough until it is uniformly distributed. Place remaining slices of cookie dough onto an ungreased cookie sheet. Bake cooke crust for 15 minutes and the cookies for 10-12 minutes. Edges should be light golden brown. Cool cookies for 1 minute and remove from cookie sheet.

Mix 1/2 c walnuts with mincemeat, and spread over cookie crust. Crumble sugar cookies and sprinkle 1 c cooke crumbs over mincemeat. Sprinkle with remaining walnuts.
