Healthy Muffin Recipes?

Does anyone have any healthy muffin recipes you would like to share? (I stole this idea from the quick breafast idea thread.) It is a great idea for me to make on the weekends and individually freeze for consumption throughout the week. However my idea of making muffins is using a boxed mix that is not very healthy. Please share some recipes!! Thanks!!
 
I don't have a healthy muffin recipe, but I do have a healthy banana bread recipe if you're interested. You could probably make them into banana muffins.

I think I may have posted this a while ago. It is from one of Dr. Ornish's books.




Blueberry Muffins

Ingredients:
1 cup whole wheat flour
1 cup all purpose flour
3 tbsp sugar
1 tbsp baking powder
½ tsp salt
2 egg whites or ¼ cup liquid egg substitute
1 cup skim milk
¼ cup unsweetened applesauce
1 tsp vanilla extract
¾ cup frozen blueberries

Directions:
1. Preheat oven to 375
2. Spray muffin pan with nonstick spray
3. Combine dry ingredients in a bowl (whole wheat flour, all purpose flour, sugar, baking powder, salt) and stir to blend
4. Combine wet ingredients in separate bowl (egg whites, skim milk, unsweetened applesauce, vanilla) and whisk until smooth
5. Add dry mix to wet mix and stir with a fork until batter is blended; do not overmix
6. Stir in the blueberries
7. Bake for 10-15 minutes

Makes 12 muffins

Calories: 101
Fat: 0.3 grams
Carbs: 21.5 grams
Protein: 3.7 grams
Sodium: 114.1 mg

Hi Kristi,

I have a recipe for muffins made from Kashi Good Friends cereal.

1 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1-3/4 cups Kashi Good Friends Cereal
3/4 cup skim milk, rice or soy (I used reg. skim milk and they came out just fine)
1/4 cup honey
2 egg whites
1/4 cup unsweetened applesauce
1 medium ripe banana, mashed
non stick cooking spray

In a small bowl, stir together flour, baking powder and salt. Set aside. In a large mixing bowl, combine Kashi Good Friends Cereal and milk and let stand for 2-3 minutes. Add the egg whites and beat well. Stir in applesauce, banana and honey. Add flour mixture and mix only until dry ingredients are moistened (over-mixing will produce rubbery muffins)

Fill sprayed muffin tins. Bake for 20-25 minutes or until lightly browned.

The next time you're in the grocery store, pick up a box of All-Bran, there's a great bran muffin recipe on the box. Adapt by putting raisins or dates in the mix.

Blueberry Corn Muffins (CORE)

Ingredients

· 1 cup uncooked cornmeal
· 1/4 cup SPLENDA
· 1 tsp baking powder
· 1/2 tsp baking soda
· 1/4 tsp table salt
· 1 item egg
· 4 Tbsp unsweetened applesauce
· 1 cup fat-free skim milk
· 1 Tbsp canola oil
· 1 1/2 cup blueberries


Instructions


1. Mix dry and wet ingredients separately. Combine, and fold in blueberries. Bake in muffin tins (sprayed with cooking spray) at 400 degrees until lightly brown on top (about 15 minutes).

Special Notes


Here's a blueberry muffin recipe that I've come up with, which is good for either plan (it's Core and low points). Best thing is that these muffins are delicious, nutritious, and very filling!

Pumpkin Oatmeal Snack Bread

1 1/2 cups oatmeal
2 teaspoons baking powder
1 tsp. Ground Cinnamon
1 tsp. Ground Ginger
1/8 to 1/4 tsp. Ground Cloves
2 tbsp. cornmeal
¾ to 1 cup Splenda (to taste)
2 tablespoons hot tap water
1/2 cup pumpkin pureed
1/4 cup egg beater or 1 egg
1 teaspoon vanilla extract
1/4 cup unsweetened applesauce
1/2 cup skim milk

Preheat oven to 350 deg. F.

Mix dry ingredients with wet ingredients. Pour into an 8 x 8-inch baking dish sprayed with Pam. Bake for 40 minutes or until inserted toothpick is clean. Very Moist!

I made this into 12 muffins sprayed with PAM. I baked the 12 muffins for 17 min. at 350 deg. F.

WD posted this message about another question about healthy muffins: I have one I put together on my Mastercook program. It makes good waffles as well.
4 eggs
1/2 cup soy flour
1/2 cup ricotta cheese, part skim
1 tsp. baking powder
1/4 tsp salt
1 tsp. vanilla
1/2 Tbs. ground flax seed
2 Tbs. Oat bran

Mix all ingredients together and cook on griddle with cooking spray.
I have this at 4 servings

13 gm. pro.
9 gm. carbs.
2 gm.fiber 351 gm sodium

Here is that reduced calorie banana bread recipe I told you about yesterday. It's really good!

1 1/2 cups all pourpose flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/8 tsp salt
2 slightly beaten egg whites
1 cup mashed banana
3/4 cup sugar
1/4 cup conola oil
Nonstick cooking spray

In medium mixing bowl stir together flour, baking powder, baking soda, cinnamon and salt.
In large mixing bowl stir together egg whites, banana, sugar and oil. Stir flour mixture into banana mixture just until moistened.
Spray an 8x4x2 inch loaf pan with non stick cooking spray. Spread batter in prepared pan. Bake at 350 degrees for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
Cool bread in pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight. Makes 1 loaf (16 servings)

I don't know if they are healthy (possibly not) but there is a muffin that Starbucks has that is my favorite! I think it is called 12 grain, but I call it the birdseed muffin. It is loaded with seeds and nuts and it really looks like bird seed to me for some reason.

If there is a way to get that recipe and make it healthy if it needs to be altered somehow, I would be eternally thankful!
 
I have a couple of others that I have made a lot:
Strawberry muffins
1/2 cup ricotta cheese, part skim
1 whoe egg
1/4 + 2 Tbs. cup skim milk(I used carb countdown}
1/2 cup soy flour
3/4 cup wheat bran( I have also used oat bran)
1/2 tsp. lemon peel
1/4 tsp cinnamon
1 teaspoon baking powder
1 1/2 T. melted unsalted butter or vegetable oil
1/2 cup splenda
approx. 1/4 cup smucker or other strawberry spreadable fruit or other flavor
Mix all ingredients except spreadable fruit together. Put some batter in bottom of muffin tin sprayed with cooking spray. Put a small amount of spreadable fruit in center and put more batter on top.
Should make 6 muffins. Bake 350 degrees for 25 minutes
119 cal; 7 gm. fat; 8 gm pro.; 9 gm. carbs; 4 gm fiber; 131 mg. sodium

Pumpkin Muffins
2/3 cup soy flour
1/4 cup wheat bran
2Tbs. flax seeds, ground
1 tsp. baking powder
1/2 cup splenda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. all spice or cloves
1/8 tsp. ginger
1/2 cup canned pumpkin
2 eggs lightly beaten
1 tbs. canola oil
3 Tbs Heavy cream, this is lo carb so you could use skim milk
1/4 cup walnts chopped
Mix all ingredients together. If thick I add a little water but it should be fairly thick.
Bake 350 for 25 minutes
166 calories;13gm fat; 8 pro; 8 carb; 3 fiber; 105 sodium
Fat and carbs would be different if you used milk instead of cream.

I think the post for this recipe was asking for muffins or pancake recipes. This was a pancake recipe. It is thick enough that I bet it would work for muffins as well. I will have to try this I worked these recipes up for dh because he stays pretty much on a low carb diet.;-)

these are SOOOOOOOOOOOOOOOOOOOOOOO good! i also substitute the kashi good friends with a cereal i get from sam's.. can't remember the name of it right now.. cuz i'm at work!

i cuz them in half and add 1 tablespoon of cream cheese.. YUMMMMMMMY! hubby and i are addicted to these! and they are good for you.. and NO SUGAR!
