Tosca Reno's Eat Clean for Kids book has a pretty good recipe for Applesauce Spice Protein Bars:
1 cup protein powder
1/2 cup spelt flour
2 cups rolled oats
1/2 cup oat bran
1/2 ground flaxseed
1 tsp sea salt
1 tsp ground cinnamon
1/2 tsp allspice
1/4 tsp ground nutmeg
1/4 tsp ground black pepper
1/4 cup apple butter
1/4 cup agave nectar
1 1/2 cups unsweetened applesauce
1/4 safflower oil
1 Tbsp vanilla
Preheat oven to 325 degrees. Put all dry ingredients in a large mixing bowl and mix well. Beat wet ingredients in another bowl until well blended. Add wet to dry ingredients and mix until well blended.
Place mixture into a 13 x 9 inch metal pan and smooth out
Bake for 20 - 25 min.
I made them a few weeks ago and my boys (9 and 12) loved them. They also like Dr. Weil's fruit and nuts bars (probably not an option for your boys, Ellie
).
Or homemade granola bars
1 cup rolled oats
1 cup muesli
1/2 cup whole wheat flour
2 scoops protein powder
1/2 cup sunflower seeds (raw)
1/4 cup unsalted sesame seeds (raw)
1/4 cup unsalted, chopped almonds (raw)
1/3 cup raisins
1/3 cup dried cranberries
2 egg whites
3 Tbsp agave nectar
3 Tbsp organic honey
3 Tbsp safflower oil
1/2 tsp ground cinnamon
pinch ground nutmeg
Preheat oven to 325 degrees. Line an 8-inch square baking pan with parchment paper.
Combine dry ingredients in a large bowl, in another bowl mix cinnamon, nutmeg, honey, agave nectar, oil and eggs. Add wet to dry ingredients and mix, it should be a little lumpy
Press mixture into pan and bake for 25 min. Set on a cooling rack to cool. When cool, cut into 1x4" bars.
We also have the frozen Stonyfield yogurt tubes, I make fresh juice and freeze them in those popsicle forms (the current one is juice from kiwi, apples mixed with bananas and a little bit of agave nectar or maple syrup).
Fresh veggies with hummus or ranch dressing
Green smoothies
Date/coconut squares and yogurt with fresh fruit
Fresh mozarella w/ tomatoes and ezekiel bread (yes my kids like it
)
Whole wheat pasta, quinoa or other grains mixed with veggies and served with tsatsiki or ranch also make a great snack
I had my kids look through the books with me and decide on what they will have for lunch, snacks, etc. They still will get junk food every once in a while but I have become a lot more insistant about a clean and more healthy diet in the last couple of months.
