Hash Brown Potato Casserole- CLEANER THAN THAT POUND CAKE

:p This is an all-time favorite of mine. I made it the other night to treat myself during exams. It's fairly easy to lighten up, using lower fat versions of all the ingredients. YUM. It stores a while and freezes okay too.

Hash Brown Potato Casserole

2 lb. frozen hash browns (I use the O'Brien potatos without the onions/peppers, just plain)
1 8-oz. carton sour cream
2 cans cream of mushroom soup
grated onion, to taste (I use a cup, my mom uses 1/4 cup...)
2 c. grated cheddar cheese
Parmesan cheese

Thaw potatoes slightly for easier mixing. Mix all ingredients except Parmesan cheese. Put in a 9 x 13" baking pan that's been sprayed with a cooking spray. Sprinkle Parmesan cheese on top. Bake at 350 degrees for 1 -2 hours. Serves 12.

I absolutely love this casserole! I'll only eat it when I know how it was made (ie. lightened up):p . My mom always makes this at Easter. I've seen some variations of it that include up to a 1/2 cup of butter! You can also crush some corn flakes on top for some added crunch.

I have a similar recipe. The family calls it "Killer Potatos" and we only eat it once a year, at Christmas, with ham.
