Good recipes with zuchini???

Does anybody have some good, lowfat recipes involving zucchini? I have some zucchini and really want to use it, but I only know recipes that are high in fat with zucchini....such are fried zucchini, zucchini bars, bread, etc... So, if you know any, please share!!

In this month's cooking light there is a great oven baked zuccini chip recipie that is DELICIOUS (there is also a great shrimp marinade in the same issue). If you can't find it, let me know and I can post it on the forum.

I just made my favorite zuchini receipe this past weekend. It's not fattening and it's really easy. Cook one or two large onions (I prefer the sweeter kind) in a little olive oil until soft and golden. Spread the onions in a baking dish. Slice up two medium zuchini and about three large tomatos. Spread a row of zuchini over the onion, then a row of tomato, then a row of zuchini, etc. Sprinkle the whole thing with basil and a little grated cheese and bake at 350 degrees for about 25 minutes. This dish, which is delicious by the way, goes great with grilled fish. My husband actually eats it cold stuffed in a wheat pita.

Zuchini fries are good.

Slice zuchini as fat or thin as you like (i do mine like regular fries). Dip in egg or egg substitute mixed with a bit of milk, then dip fries into whole wheat bread crumbs mixed with some parmesean, if you like. Spread fries on a cookie sheet lightly sprayed with non-stick spray, then drizzle lightly with olive oil, and cook.

This is a good one. I'm not sure how low fat it is, but it is a different use zucchini. It's from the original Moosewood Cookbook (one of my favorites), by Mollie Katzen. Here's a link to it at Mollies' site:

I'm actually going to try this one tonight using summer squash, as I'm currently up to ears in it. Never plant squash where a compost pile has been, unless you want a LOT of freakin' squash!! :D :D

This is the perfect post. I just bought a ton of zuchini last night at the local farmer's market 4/1.00. I mean they are huge. I would also love a lowfat bread or bar if anyone has any. I am so going to make the one with the tomatoes and onions. But for tongiht it will be the fries. karen
 
One of my favorite dinners:

Penne Pasta (low carb if you prefer) cooked as directed
Zucchini
Yellow Squash
Asparagus
Red Pepper
Onion
(insert pretty much any other veggie here - I use whatever I have)

Cut up veggies and put in aluminum pan, sprinkle Olive oil and some garlic salt on top, and grill or bake until just crisp tender. Serve over pasta and sprinkle some parmesan over top.
 
I use zucchini a lot. I alter and change the recipes according to what I have on hand. One I like is to take 1/2 pound ground turkey I buy the white 98% fat free,or diet lean beef, brown it along with two garlic cloves, and red onion. Add peppers. I sometimes buy birdseye pepper stir fry, Add in 2 cups mushrooms ( I have done this without them) 1/4 teaspoon oregano, 1/4 tespoon basil, 14 oz no salt tomatoes or two chopped tomatoes. I add pepper and 1/4 cup parmesan cheese. Cook about ten minutes and enjoy. I like to add a couple of Tbs of sour cream. variations may change this a little, this should be around 172 cal., 6 gm fat, 18 gm protein, 12 gm carbs, 3 gms fiber 145 sodium
Today I did this with chicken breasts diced and no mushrooms.

Another thing I like to do with zucchini is add pasta sauce, and a small amount of whole wheat pasta then sprinkle with parmesan cheese, feta cheese or mozzarella.

This is one of my favorites...

Zucchini 'Crabcakes'
2 C grated zucchini (sometimes it can be watery after grating so drain and pat dry if needed)
1/2 C egg substitute
1 C canned bread crumbs
2 T minced onions
1 T lite mayo
1 1/2 tsp Old Bay seasoning (this is crab seasoning)

Mix all together and form into cakes. Roll into flour (this is optional - I've done it with or without flour and it tastes fine either way). Spray skillet and brown on both sides.
 
I'm about to be buried in zucchini so I've bee putting it up lots of ways. This week I started drying *chips* in the dehydrator and found that they are really good. My first couple attempts didn't come out so good, I just sliced them (using a slicer to get the thickness uniform) and sprinkled with spices and dried them. They turned out way too spicy and hard. Then I read to blanch the zucchini in acidic solution for 2/3 min before drying and they will come out crisp, not hard. The instructions said to use 1 cup white wine vinegar or lime juice to 2 cups water. I used vinegar and just a hint of spice (chili powder, lemon pepper, etc.) I sliced them less than 1/4 inch thick. If you slice too thin they just kind of disappear. I ate some today with plain yogurt and honey and they were really good.
