Fish questions

Confession time. DH and I never eat fish. Don't know what kind to get or even how to go about cooking it. We grill and bake our meats. I use to have to eat canned tuna a lot as a kid and now I cannot stand it. Don't even like the smell. So, DH and I have never bought any fish. We thought we would give it a short and see what we think. I need some suggestions please on what type of fish to get and how I should cook it.

My favorite is salmon. I've cooked it many different ways. My favorite is baking. You can marinate or use spices. I usually use Butter Buds (a salty butter flavor) and pepper. Preheat oven around 425-450 degrees. Depending on the size of the fish, about 20 minutes in the oven.

I also cook Tilapia the same way. This fish cooks a lot faster.

How do you buy your fish? Prepackaged or the fish section in your grocery store or somewhere else? Also how do you choose a fish? I mean a good one from a bad one? That still doesn't sound quite right. Hmm. How do you tell if a fish is any good? I am not communicating well today. :D
 
Orange Roughy is my favorite. Just sautee in a little olive oil, and some seasonings. (I just use salt & pepper) Then I squeeze fresh lemon on top. It's delicious!
 
I go to the fish person in the grocery store. I have bought the packaged pieces, but they have not been as fresh in my experience.
You can tell if a fish is going bad by the smell. It should NOT be very "fishy" smelling.
Also, look at the size of the pieces laid out. If there is a bunch of smaller pieces (like in salmon), chances are that's the old left over stuff.
I also don't buy any that have been marinated or have breadcrumbs for the same reason.

Thanks again Susan! Sorry about all the questions. No one in my family or my DH's family eats fish so we have no help there. We are going to give it a shot though. :)

Go to Epicurious.com and type in the type of fish you want in the recipe search, and you'll get a big list of recipes to choose from. I love "Dave's marinated salmon," and yesterday I did their flounder with capers and wine-tomato sauce. I also love their Thai green curry with linguine and scallops and shrimp. I could go on and on. Absolutely wonderful recipes, and they also solicit reader reviews. In general, ask the fish person at your supermarket what is the freshest fish and go from there. Yesterday it was definitely flounder, and it was also wild caught, which I much prefer to farm-raised (rumored to be loaded with PCB's).
