Fat-Free Banana Loaf

I went to the Oxygen website the other day to subscribe and saw a recipe for Banana bread.

I baked some and it was delicious. It's fat free and uses splenda.

Here is the recipe:

Wet:
3 egg whites
3 ripe bananas, mashed
1/2 cup applesauce
3/4 cups Splenda

Dry:
2 cups flour ( I used whole grain pastry flour)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup almonds, chopped or slivered ( I didn't put any nuts in mine)

Preheat oven to 325 degrees F. In a medium bowl, beat the egg whites, and add the remaining wet ingredients - mix thoroughly. In another bowl, mix the dry ingredients. Then lightly blend all of the ingredients together, and pour the mixture into a loaf pan. Bake for 50 minutes or until a toothpick comes out dry. Let the loaf stand in the pan for 10 minutes, them slice and serve.

I think I'll experiment with a zucchine bread variation.

I copied and pasted this to my collection! Thanks so much! This one looks really good! Do you think it would work with whole wheat flour? Did it work for you?
 
I used Arrowhead Mills whole grain pastry flour and it worked great.

This banana bread is really, really good! Highly recommended. The only problem with it is that even though it's fat free and sweetened with fruit and splenda, it still has calories:-(

I find that to be a problem with so many things!!!:D Except for my tea...and Splenda...Thank the good Lord!!:p

I hope to make the bread this weekend!
 
This bread sounds great. I follow Weight Watchers and this definitely fits within my allowed points for the day. Thanks for posting this!
 
I would not consider this a "sweet" even though it may be tasty. Splenda has 0 calories, carbs, or anything. The only sugar comes from the applesauce(use no added sugar version) and bananas...fruit based...granted the two are simple carbs but high fiber at that. I'd eat this with breakfast with a good protein like egg whites and turkey bacon!

I am making this on Saturday...picked up the stray ingredents from the super market tonight! I will enjoy guilt free! I think even Charlotte could eat this with no guilt!

I think I will add the almonds, though. It's a good fat and I am seeing more and more kudos to almonds lately!
 
THIS IS SO FREAKING GOOD!!!!! I am on my second loaf.

This is so easy and so yummy! I did sub 1 egg beater for the egg whites...I lOVE the beaters!!!

I recommend warming the bread a little and covering with spray butter. It doesn't "need" it but man oh man....if you could eat heaven, this is what it would taste like!
 
Yes, it is SO FREAKING GOOD!

Here's another recipe that is just as good. I really love sweets but don't like the way I feel when I eat refined sugar so 've been making these often.

Pumpkin Bread

1 1/2 C Splenda
1 C canned pumpkin
1/2 C applesauce
1/2 C water
egg substitute equivalent to 2 eggs
1 2/3 whole wheat pastry flour
1 tsp soda
1 tsp cinnamon
3/4 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
1/4 tsp cloves (scant)

Combine first five ingredients in a small bowl and beat well. In a separate bowl, combine remaining ingredients and mix well. Gradually add to pumpkin mixture and beat well.

Pour batter into a loaf pan that has been sprayed with cooking spray. Bake at 350 degrees F for 65 to 70 minutes or until toothpick inserted in the middle comes out clean. Cool 10 minutes before moving to wire rack.

(The first few times I made this I didn't have any pumpkin on hand but did have a couple of cans of sweet potatoes. I used the sweet potatoes and it was very good. Also, I don't have ground cloves on hand so I used all spice.)
