I bet it would be good without meat. You could also add chickpeas to it, etc. to replace the chicken.
 
How about a fairly simple - cheese ravioli with a 3 pepper sauce?

I made it last night and the family (all meat eaters) raved.
 
It's a good recipe - but you have to roast the peppers, so that's a pain - it's easy but it's a pain.

Here's what you need -

2 each of red, green and yellow peppers
Frozen Ravioli
Jarred spaghetti Sauce (I use Classico Spicy Red Pepper Sauce)
1 tbsp Olive oil
1/4 tsp salt
Pepper to taste
Moz Cheese (4 oz)

Roast the peppers by broiling them in the oven until the skins are blackened (rotate to make sure all of the skins are blackened). Remove from oven and place in covered bowl for 20 minutes to cool.

Cook the ravioli according to the package.

Remove the skins and seeds from the peppers, and dice. Mix with the olive oil and salt and pepper. Put a layer of pasta sauce in a pan, layer 1/2 of the pepper mixture, then the ravioli, the the rest of the peppers, and the rest of the sauce. Sprinkle cheese over top. Bake at 350 for 30 minutes.
 
Some of us have to feed a husband thet eats for 3 . I think that is why he works out.
I made an eye of round roast with green beans celery and onion all night in the crock pot. I am at work everyday from 9:30-7 so have to do 30 min meals . Or pressure cooker or crock pot.
I will make him potatoes.
What ever works.
Smelled really good this morning.
