Cooking Beets

Does anyone know how to cook "Beets" (the vegetable)? Do you steam it in water, do you cut it, can you eat the stem and beet part, ect? Any help is greatly appreciated. I'd love to make some for dinner.

Thanks,
Adri;)

Please don't get them near water... the yummy juices will drain away. I always roast them in the oven...without the greens. Haven't tried the greens...has anybody?

Well I usually just cook then in the microwave as a hard vegetable. I carefully take off the skin and then eat them. I love beets. You cook them like you would a baked potato. You can bake or boil them but this is quicker.

I cut them up and roast them too. About 350 x 45 minutes or so. I just scrub and cut into quarters or smaller and place in oiled pyrex dish. As far as the greens, I think you can treat them like any other green, but I have only put them in a fruit smoothie w/ pineapple and other stuff.

Look online for a borscht recipe. It's a Ukranian soup, sometimes made with a ham bone or beef even. I've tried some veggie versions. (one time even added rhubarb) Google search it or Looney Spoons cookbook from Canada has a recipe that's good. MMMMM, I'm visiting my Granny in 4 days, I think I'll ask her to make some! (minus the cream of course!)

Adri.

They are also good raw and cut up.

Janie,
First of all, thanks for your help!! I might acually prefer the beets raw! But what part of the beet do you cut up?

Thanks,

~Adri;-)

Yumm, I love beets. I just roasted some tonite. Peeled them, quartered them, sprayed with some oil and roasted at 375 until done. Then I mixed them with some cooked kale, the beet greens, some small white beans, vineger, soy sauce and water and cooked it all together. Really good.

Adri,

The red part. It is so good all alone, inn salads, or cut up in squares and on top of anything you have cooked. Try in, you most likely will like it. I know your body will.
