Morning everyone.

What's on the menu today. Any new summer receipes? I'm goint to read yesterday's post and I'll chat later.:)
 
Good morning! Happy Sunday! Here in Texas we are getting so much rain that we have had absolutely no outdoor summer! No swimming, hiking, bike riding, etc. But I have seen every single movie out there. I digress, but I was so hoping for at least some sun today, but no, it is pouring as I type...

Robin and Wendi-falling off the wagon hurts. i have been on and off of it for two weeks. I pulled put Tosca's book and feel a little better and more focused. Bake sales and ice cream cones are the worst!

New recipe for today
Shrimp with feta, artichoke and quinoa for supper.

Valerie- OUCH how is that PF doing. I had the same thing from doing gymnastics...when I was young. My mom took me out of gymnastics for a month (over reacted).

Hi Robin and Mikkia, and all clean eaters to follow!

Robin, i have absolute kickboxing/combat intervals, i think the same one you have. I just love the core section!!
My back is a bit looser today, its technically my rest day, but i did Barr method and a 2 hour dog walk. DH and I are taking the dogs to visit my parents out of town today.
So far, not terrible, but way too much!!
B: usual oatmeal
S: strawberries and almond butter :) weird one
L: minestrone soup, carrots/hummus, yogurt and a protein pancake, darn those are great!!
My parents are doing veggie burgers on the BBQ with baked sweet potatoes, i have them trained!!!

Mikkia, your legs must be on fire!!
Robin, you workin out today?? I might have missed it.

Robin - I got the recipe from watching Ellie Krieger on Food TV. Here's the link to the recipe along with the full recipe below

1 tablespoon olive oil
1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
1/2 teaspoon salt, plus more, to taste
1/4 teaspoon freshly ground black pepper, plus more, to taste
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 bay leaf
1/4 teaspoon cayenne pepper
1 tablespoon tomato paste
6 ounces diced, smoked ham
2 1/2 cups low sodium chicken broth
1 (14 1/2-ounce) can no-salt added diced tomatoes
1 cup uncooked long-grain white rice
1 pound peeled and deveined medium shrimp
Hot pepper sauce
Heat the oil in a large Dutch oven over a medium heat. Add the onion, peppers and garlic and saute until they begin to soften, about 10 minutes. Mix in the next 11 ingredients, salt through the diced tomatoes. Bring to a boil. Stir in the rice, cover, reduce heat and simmer for about 20 minutes, or until rice is done and most of the liquid is absorbed. Add the shrimp and cook, covered, for 5 minutes more, or until shrimp is cooked through. Season with salt and pepper, to taste. Serve with hot pepper sauce.

Mikkia - sorry to hear about all the rain in Texas. I am on the East Coast and we are dying for rain. We are getting Thunderstorms today but I don't think it will be enough.
